LOADED MACARONI AND CHEESE RECIPE -

This macaroni and cheese is loaded with lots of cheese and real butter. It's not for the diet conscious. Everything in moderation, they say. Recipe is from Taste of the South.

1 (16 ounce) package elbow macaroni, cooked according to package directions and hot
1 cup butter
2 (8 ounce) packages sharp cheddar cheese, shredded
4 large eggs, lightly beaten
2 (12 ounce) cans evaporated milk
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 (8 ounce) package mild cheddar cheese, thinly sliced

Steps:

  • Preheat oven to 375 degrees.
  • Lightly grease a 13x9x2-inch baking dish; set aside.
  • In large bowl, combine macaroni, butter and shredded Cheddar cheese, stirring until melted.
  • Spoon mixture into prepared baking dish.
  • In medium bowl, combine eggs, evaporated milk, salt and pepper.
  • Pour mixture over macaroni, stirring to combine.
  • Cover with sliced Cheddar cheese.
  • Bake for 1 hour, or until cheese is lightly browned.

Loaded Mac 'n Cheese - An Affair from the Heart image

Delicious, creamy loaded mac 'n cheese. Made with cream cheese and mild cheddar, and topped with green onions and bacon.

Number Of Ingredients 12

1 (8 ounce) package elbow macaroni, prepared according to package
4 Tablespoons butter
3 Tablespoons flour
1 1/2 cups milk
1/2 cup sour cream
1 (8 ounce) package cream cheese, cubed
1 (8 ounce) package of mild cheddar cheese, cubed
1/4 teaspoon pepper
1/2 teaspoon salt
1 Tablespoon chives
Tops of 2-3 green onions, sliced
6 slices bacon, cooked until crispy and broken into pieces

Steps:

  • Preheat oven to 400 degrees and spray a 3 quart casserole dish with non-stick cooking spray. Cook macaroni according to package instructions, drain and set aside. Melt butter in a large saucepan. Whisk in flour until smooth. Gradually add milk and bring to a boil, cook and stir for about 2 minutes. Reduce heat. Whisk in sour cream and two cheeses, whisking until smooth. Add chives, salt and pepper. Add macaroni, stir to combine. Pour into prepared casserole dish. Bake for 15 minutes. Remove and top with bacon and green onion.

  • Preheat oven to 350 degrees F. Place shallots and garlic in a small aluminum foil pouch and drizzle with olive oil. Roast 20 to 30 minutes or until tender. Remove from foil and chop.
