1 cup sugar
1/2 cup Land O Lakes® Butter softened
1/2 cup shortening
1 large Land O Lakes® Egg
2 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1 tablespoon freshly grated lemon zest
1 tablespoon finely chopped fresh mint leaves, lemon balm or lemon verbena

Steps:

  • Heat oven to 350°F.
  • Combine 1 cup sugar, butter, shortening and egg in bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour, cream of tartar and baking soda; beat at low speed until well mixed. Stir in lemon zest and mint.
  • Place additional sugar in another bowl. Shape rounded teaspoonfuls of dough into 1-inch balls; roll in sugar. Place 1 inch apart onto ungreased cookie sheets. Bake 10-12 minutes or until edges are very lightly browned.

1 cup butter, softened
1 cup sugar
1 cup confectioners' sugar
1 cup canola oil
2 eggs
1 teaspoon lemon extract
4-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
Additional sugar

Steps:

  • Preheat oven to 350°. In a large bowl, beat butter, sugars and oil until blended. Beat in eggs and extract. Combine flour, baking soda and cream of tartar; stir into butter mixture (dough will be stiff)., Roll into 1-in. balls; place 2 in. apart on ungreased baking sheets. Press with bottom of a glass dipped in water, then in sugar. Bake 10 minutes or until edges are lightly browned.

Cookies stay fresh in an airtight container at room temperature up to 1 week. Cookies freeze well, up to 2 months. Rolled cookie dough can be frozen, up to 2 months. Bake frozen on baking sheet for 11-13 minutes.
