Number Of Ingredients 6

1 tablespoon dried lavender flowers (see Note)
Coarse sea salt
1 tablespoon olive oil
3 garlic cloves, halved
Eight 4- to 5-ounce lamb rib chops (1 inch thick)
Freshly ground pepper

Steps:

  • In a spice grinder, pulse the lavender flowers until finely ground. Transfer the ground flowers to a small bowl and toss with 1 tablespoon of sea salt.
  • Heat the olive oil in a large skillet. Add the garlic and cook over moderately high heat until golden, about 2 minutes. Discard the garlic. Season the lamb chops with salt and pepper, add them to the skillet and cook until browned outside and medium rare within, about 5 minutes per side. Transfer the chops to plates and serve the lavender salt on the side.

Yield Makes 4 servings

Number Of Ingredients 6

4 large garlic cloves, pressed
1 tablespoon fresh thyme leaves, lightly crushed
1 tablespoon fresh rosemary leaves, lightly crushed
2 teaspoons coarse kosher salt
2 tablespoons extra-virgin olive oil, divided
6 1 1/4-inch-thick lamb loin chops

Steps:

  • Mix first 4 ingredients and 1 tablespoon olive oil in large bowl. Add lamb; turn to coat. Let marinate at room temperature at least 30 minutes and up to 1 hour.
  • Preheat oven to 400°F. Heat remaining 1 tablespoon olive oil in heavy large ovenproof skillet over high heat. Add lamb; cook until browned, about 3 minutes per side. Transfer skillet to oven and roast lamb chops to desired doneness, about 10 minutes for medium-rare. Transfer lamb to platter, cover, and let rest 5 minutes.
