heads, Napa cabbage

1 c.

water, salted (kosher or sea)

1 c.

bunch of chives

1 c.

kochukaru

1 c.

onions, chopped

1 c.

kombucha (KeVita Pineapple Peach)

garlic cloves, minced

1/4 c.

ginger, minced

2 tbsp.

kosher salt

Steps:

  • Split and soak the Napa cabbage in salted water for 30 minutes. While soaking, combine kochukaru, onions, garlic, ginger, kombucha, and salt into a mixing bowl. Stir until it forms a paste. Remove cabbage from water. Let drain and dry for another 30 minutes. Cut chives into 2-inch stripes. Separate the leaves of cabbage and mix in the paste and chives. Store in a container and let ferment for 24 hours. Enjoy for up to a month, if not more, as it ferments.
