Wash the tomatoes, keeping them on the vine. Preheat the oven to 200°C/gas mark 6.
Pour the oil over the tomatoes in a foil tray, then sprinkle the herbs on top. Season.

- Roast until tomatoes are tender but not falling apart, stirring now and then, about 2 hours.
