3 tbsp. butter
3 tbsp. all-purpose flour
1 c. turkey pan drippings
2 c. low-sodium chicken broth (or turkey stock)
Kosher salt
Freshly ground black pepper
1 tsp. freshly minced thyme
1 tsp. freshly minced sage

Steps:

  • In a small saucepan over medium heat, melt butter. Whisk in flour and cook until golden, 1 minute, then whisk in pan drippings. (If you have more than a cup of drippings, use it and reduce the amount of broth!)
  • Bring mixture to a boil, then reduce heat and simmer gently until slightly thickened. 
  • Stir in fresh herbs, then whisk in 1 cup broth and return mixture to a simmer. Season with salt and pepper. 
  • Simmer 10 minutes, gradually adding more broth if gravy is too thick. Adjust seasoning.

1/4 cup turkey drippings (fat and juices from roasted turkey)
1/4 cup Gold Medal™ all-purpose flour
2 cups liquid (juices from roasted turkey, broth, water)
1/2 teaspoon salt, or less, if using turkey drippings
1/2 teaspoon pepper

Steps:

  • Pour drippings from roasting pan into bowl, leaving brown particles in pan. Return 1/4 cup drippings to roasting pan. (Measure accurately because too little fat makes gravy lumpy.) Stir in flour. (Measure accurately so gravy is not greasy.)
  • Cook over medium heat, stirring constantly, until mixture is smooth and bubbly. Stir in liquid. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in salt and pepper.
