Yup, olive oil. It’s all the talk these days at cutting-edge cocktail bars around the country. It’s sweet without being sugary, and mildly earthy. Most importantly, it creates a silky cocktail unlike any you’ve tried before. Various ways of getting olive oil (or any other oil, for that matter) into your booze include “fat washing” your spirits, rinsing the inside of your glass with oil, or, like in this recipe for a drink I’ve called Popeye’s Girl (get it? Olive Oyl?), mixing the oil directly into the drink itself.

- In a pint glass, muddle the basil with the simple syrup. Add Plymouth gin, Lillet Blanc, lemon juice, bitters, and olive oil, and dry shake the cocktail (no ice) for thirty seconds to a minute. Just like a salad dressing, you’re trying to emulsify the oil with the rest of the ingredients. Add ice, and shake vigorously until cold. Strain over ice into a rocks glass, and garnish with a basil sprig.

This pizza is one of my most popular dishes, a kind of warm spinach salad on a crust. I've been serving it since the earliest days at Sullivan Street (its origins—how I came to make it—are now lost in the mists of memory). But, even today, to the best of my knowledge, I'm the only one who offers it. Try it at home, and right after that first bite, you'll see why it's one of the most popular pies I've ever devised. When I make the Popeye in my home kitchen, I deviate from the usual system in this book and bake it (as called for here) rather than placing it under the broiler. The image of that mound of spinach directly under flame just seems wrong—I'm not even sure what would happen, but it wouldn't be good.

Meanwhile, in a large nonstick pan, heat oil over medium-high heat. Add onion; cook 2 minutes or until just transparent. Add spinach and cook until all the moisture has evaporated, about 5 minutes. Set aside to cool. In a large bowl, combine ricotta, 1 1/2 cups mozzarella, olives (if desired), parmesan, salt, and pepper. Add cooled spinach mixture and mix well.
