Assembling pork sausages is a snap and, as always, if you use best-quality ingredients, it's hard to beat homemade.From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books).

Yield Makes 8 small patties

Number Of Ingredients 10

1 pound ground pork
1 garlic clove, minced
1 tablespoon dried sage, crumbled
3/4 teaspoon dried thyme
1/2 teaspoon dried fennel, crushed
Pinch of ground nutmeg
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground black pepper
1 large egg white
2 teaspoons vegetable oil

Steps:

  • Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
  • To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
  • Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. Drain and serve immediately with pancakes, waffles or eggs. Sausage patties can be fully cooled, wrapped, and frozen for microwave reheating.

You may use beef or pork or a combination of both. You may use splenda instead of brown sugar or maple syrup. You will have to use a little more splenda.If you have fresh herbs the flavor is more intense.This is a make ahead recipe and freeze if desired. I used to make this with ground vension and ground pork. The kids loved it.

Number Of Ingredients 9

2 lbs ground beef (or 1 lb beef and 1 lb pork) or 2 lbs ground pork (or 1 lb beef and 1 lb pork)
3 tablespoons cilantro leaves
2 1/2 teaspoons salt or 2 1/2 teaspoons salt substitute
1/2 teaspoon ground oregano
1/2 teaspoon ground sage
1/2 teaspoon black pepper, if desired
1/4 cup warm water
1 teaspoon brown sugar or 1 teaspoon Splenda sugar substitute
1 teaspoon maple syrup (optional)

Steps:

  • In large bowl, mix ground meat and spices and herbs.
  • In warm water, add brown sugar or splenda and maple syrup if desired. Stir.
  • Add to ground meat mixture and mix well.
  • Form patties.
  • Fry in heavy skillet on medium heat. Brown on both sides.
  • Pack each pattie between waxed paper if you freeze. Then reheat in pan or microwave.

  • In a large bowl, combine herbs, garlic, sugar, salt, and ground pork. Using a hand mixer beat the ground pork until well-combined. To shape the patties, divide ground pork mixture into 2-ounce portions. Shape portions into balls and then gently press using the palms of your hands. Don’t press them all the way or they will break and crack. Shape the patties by gently pressing at the center and working from the center out, turn the patties around in your hand as you shape them until they are uniform. Slightly depress the center of the patty and push a little extra meat towards the edges. This will give you an even patty once it is cooked.Heat a nonstick skillet over medium-high heat. Cook the patties for 2 minutes on each side or until cooked through. Note: Freeze cooked patties in a single layer on a sheet pan. Transfer frozen patties to a resealable bag. Microwave for 2–3 minutes or until heated through.
