Tender Salmon fillets are flame cooked and topped with a sweet/salty honey garlic glaze in this instant-hit easy recipe.

EquipmentOoni Cast Iron Pan IngredientsServes 2-4 people For the Salmon2-4 salmon fillets1tbsp olive oil 1tbsp thinly sliced scallions1tbsp mixed sesame seedsPinch chopped parsley  For the Glaze2tbsp soy sauce1tsp cornstarch1tbsp honey1tsp hot sauce1tsp minced garlic1tsp minced ginger MethodIn a small saucepan, whisk together the soy sauce, honey, hot sauce, minced garlic, minced ginger, and finally your cornstarch. Whisk to combine, then continue whisking over a medium heat for 2-3 minutes until the sauce turns into a syrup. Fire up your Ooni pizza oven. Aim for 662°F (350°C) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer. Preheat your Ooni Cast Iron Pan in your Ooni pizza oven with a splash of oil for 3 minutes.  Brush your salmon fillets with olive oil and place them in your hot sizzler pan. Return the pan to the oven and cook the fillets for 4-5 minutes until opaque, making sure to flip the pan round to ensure an even cook. Remove the pan from the oven and brush the fillets with your glaze. Finish with a sprinkle of sesame seeds, fresh parsley and sliced scallions. Serve right away with a portion of your favourite veg and a glass of crisp white wine.

Pickled garlic? You bet! This simple pickled garlic clove recipe is made by adding whole peeled garlic cloves to a flavorful brine. Use almost any type of clear vinegar--white, red or cider vinegar. Serve as part of an antipasti spread or chop and add to pasta salad, vinaigrettes or stir-fries. Use the freshest garlic you can find to make the best pickles.

1 cup garlic cloves, peeled, cut in half if large
? cup water
? cup white or red vinegar
¼ cup sugar
1?¼ teaspoons kosher salt
½ teaspoon whole black peppercorns
½ teaspoon mustard seeds
½ teaspoon fennel seeds
½ teaspoon crushed red pepper

Steps:

  • Bring a small saucepan of water to a boil over high heat. Add garlic and cook for 3 minutes; drain. Transfer the garlic to a 2-cup glass canning jar (or other heatproof jar) with a tight-fitting lid.
  • Combine 2/3 cup water, vinegar, sugar, salt, peppercorns, mustard seeds, fennel seeds and crushed red pepper in a small saucepan. Bring to a boil over high heat, stirring until the sugar and salt are dissolved. Pour the hot pickling solution into the jar. Let cool to room temperature. Cover and refrigerate for at least 8 hours for the flavors to develop.
