2 packages (16 ounces each) frozen corn
1 package (8 ounces) cream cheese, softened and cubed
4 jalapeno peppers, seeded and finely chopped
1/4 cup butter, cubed
2 tablespoons water
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a 3-qt. slow cooker, combine all ingredients. Cover and cook on low for 4-5 hours or until corn is tender, stirring occasionally.

Number Of Ingredients 5

2 quarts jalapeno peppers
2 cups white wine vinegar
2 cups water
1/2 teaspoon pickling salt or 1/2 teaspoon pickling spices
4 cloves garlic

Steps:

  • Slice peppers or leave them whole.
  • (To prevent bursting, cut two small slits in whole peppers.).
  • Pack peppers tightly into clean, hot jars.
  • Combine vinegar and water; heat to a simmer.
  • Do not boil.
  • Pour hot vinegar over peppers, leaving 1/2 inch headspace.
  • Add pickling salt and a clove of garlic to each jar then seal.
  • Process in boiling water bath for 10 minutes.

Sprinkle the cheddar cheese all over the top of the dip, followed by the crushed chips. Bake for 12-14 minutes, until the edges are bubbly and the cheese is melted all over. Top with the remaining cooked bacon and extra slices of jalapeno. Serve with more tortilla chips and toasted baguette.
