Pie crust recipe using hot water instead of cold.

Yield 2 pie crusts

Number Of Ingredients 5

¾ cup shortening
½ teaspoon salt
1 teaspoon milk
¼ cup boiling water
2 cups all-purpose flour

Steps:

  • In a large bowl, combine shortening, salt, milk and boiling water. Whip with fork until smooth and creamy.
  • Add 2 cups flour and stir with round-the-bowl strokes until all flour is incorporated.
  • Makes crust for one double crust pie.

Easy, always good pie crust. Very tender. This recipe uses vinegar and cornstarch.

Number Of Ingredients 7

1?½ cups shortening
1 teaspoon distilled white vinegar
2 tablespoons milk
½ cup hot water
4 cups all-purpose flour
2 teaspoons salt
1 tablespoon cornstarch

Steps:

  • In a large bowl, combine shortening, vinegar, and milk. Pour in hot water and whip until mixture is smooth.
  • In a separate bowl, mix together flour, salt, and cornstarch. Add flour mixture to shortening mixture and stir just until dough comes together. Roll out dough between sheets of wax paper. If dough is difficult to work with, refrigerate before rolling.

The pastry is shaped by hand whilst it is still warm, and is excellent for using with intricate pie moulds - the technique is known as "hand raised" and pies made this way are called "raised pies". The pastry is easy to make, but MUST be kept warm whilst you are using it - I keep mine warm over a pan of simmering water. This pastry is excellent for all types of traditional raised pies, such as Game pies, Pork pies and Veal and Ham pies. (Preparation time includes the one day needed for the pie to cool down and then for jellied stock to be added, and then allowing for the jellied stock to set.)
