Cream Cheese-Stuffed Bagel Bites Recipe by Tasty image

Here's what you need: water, instant dry yeast, malt syrup, bread flour, salt, water, salt, baking soda, malt syrup, egg wash, onion, poppy seed, sesame seed, garlic, cream cheese

Number Of Ingredients 15

1 cup water, warm, plus 2 tbsp
1 teaspoon instant dry yeast
1 tablespoon malt syrup
3 ½ cups bread flour
2 teaspoons salt
2 qt water
2 teaspoons salt
1 tablespoon baking soda
2 tablespoons malt syrup
egg wash, as needed
onion, to taste
poppy seed, to taste
sesame seed, to taste
garlic, to taste
cream cheese, frozen in 1 tbsp. balls to taste

Steps:

  • Start by activating the yeast. Add yeast and malt syrup to warm water, stir until dissolved. Once the yeast mix starts bubbling, you'll know the yeast is active.
  • Combine the dry ingredients in a large mixing bowl. Add the activated yeast mix and form a loose dough in the bowl.
  • Turn dough out onto your surface and knead until everything comes together nicely. (If it’s too dry, add more water a little bit at a time.) Transfer dough to an oiled bowl, cover and let the dough rest for 45 minutes.
  • While the dough is resting, prep your cream cheese. Freeze cream cheese into 1 tbsp. balls.
  • Punch down dough after 45 minutes, knead the dough a few times. Pull a handful of dough, form into a ball then flatten and wrap around a frozen cream cheese ball. Repeat with the rest of the dough. Place bagel balls on a parchment paper, cover and let it rest for 20 minutes.
  • While the bagel balls are resting, bring your poaching liquid ingredients to a boil over medium heat.
  • Take the rested bagel balls and boil in the poaching liquid for 15-20 seconds. Remove and place on parchment paper.
  • Brush with egg wash and sprinkle desired bagel toppings.
  • Bake in 325°F (160°C) preheated oven for 20 - 30 minutes until top is golden brown.

1¾ cups plus more for dusting self-rising flour
1 cup whole milk greek yogurt
1 beaten large egg
1 tbsp McCormick® Sea Salt
cut in half bagel
1 tbsp marinara sauce
2 tbsp grated low-moisture Mozzarella cheese
10 mini pepperoni slice
1 cut in half bagel
1 cheddar cheese slice
1 cooked sausage patty
1 fried egg
1 cut in half bagel
1 Monterey Jack cheese slice
1 tsp ranch dressing
1 halved crosswise bacon slice
1 thigh, grilled, sliced chicken

Steps:

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, mix the flour and yogurt together until the dough comes together in a ball.
  • Turn the dough out onto a lightly floured surface and knead until smooth, about 5 minutes. Using a bench scraper, divide the dough into 8 equal portions.
  • Working 1 at a time, roll each portion of dough into a log about 4 inches (10 cm) long. Shape the log into a ring and transfer to a baking sheet lined with parchment paper.
  • Brush the tops of the bagels with egg wash and generously season with salt.
  • Bake for 17 minutes, or until the tops are golden brown and the bagels are cooked through.
  • Day 1 - Pizza Bagel
  • Servings: 1
  • Preheat the oven to 375°F (190°C).
  • Spread the marinara sauce over the bagel halves. Sprinkle the mozzarella cheese over the sauce and top with the pepperoni.
  • Place on a baking sheet and bake for 8 minutes, or until the cheese is melted and the pepperoni is starting to crisp.
  • Enjoy!
  • Day 2 - Breakfast Bagel
  • Servings: 2
  • Preheat the oven to 375°F (190°C).
  • Place the cheddar cheese on one half of the bagel, then toast in the oven until melted, about 3 minutes.
  • Layer the sausage patty and fried egg on other half of the toasted bagel, then top with the cheesy half.
  • Enjoy!
  • Day 3 - Chicken
  • Servings: 2
  • On one half of the bagel, layer the Monterey Jack cheese, ranch dressing, bacon, and chicken thighs. Top with the other bagel half.

  • 1) In a small bowl, mix together the warm water, 1 teaspoon of sugar and yeast, set aside for a few minutes to allow the yeast to activate. 2) Once the yeast is activated, in the bowl of a standing mixer, add the flour, salt, remaining sugar and yeast and water mixture, attach a dough hook and mix for about 8 minutes on medium-low speed until your dough is smooth. Place the dough in an oiled bowl and (flip it over to coat the whole thing with a bit of the oil) cover and allow it to rest for about an hour and a half. 3) Once the dough has risen (won?t be doubled in size but will be pretty risen by then) flip it over onto a very lightly floured surface, deflate it gently and then divide the dough into 16 equal pieces. 4) Form each piece into a ball by rolling it between the palm of your hand and your work surface, then dip your two pointer fingers in some flour, using one finger poke a hole (go all the way through) in the center of each ball and using both pointer fingers, poke them through the center hole and rotate your fingers to about a 2? hole (check out video for more clear instructions on this). 5) Place the bagels on a parchment paper lined baking sheet, cover with a damp, lint free towel and allow to rest for about 20 minutes. 6) Meanwhile, preheat your oven to 425 degrees and place one of your oven racks on the top 2/3 of the oven. In a large, wide pot (I used my dutch oven for this) add your water and honey and bring to a gentle boil, reduce the heat to simmer, add 4 bagels at a time and cook them for 1 minute on each side and then transfer them onto the same baking sheet (make sure you flip them back to top-side-up) repeat with all the bagels. 7) Brush the tops and sides of each one with the beaten egg white wash and bake them for about 20 minutes or until deeply golden brown all around (rotate your pan halfway through). 8) Allow them to cool for a few minutes on your baking sheet before moving them to a cooling rack to finish cooling completely. 9) Once cooled, cut them in half, then smear a little sauce on the cut surface of each one and sprinkle them with some of the chopped mozzarella and pepperoni, pop them back in the oven for 10 to 12 minutes or until the cheese is melted and it?s slightly golden brown on top. NOTES: Store them in a tightly sealed bag in the freezer (make sure they are all in one layer so they don?t stick) and to reheat them, bake them from frozen in a 375 degree oven for about 10 to 15 minutes.
