4 cups pecan halves
1?½ cups blanched whole almonds
1?¾ cups walnut pieces
4 egg whites
Dash of salt
2 cups sugar
1 cup butter, melted

Steps:

  • Spread pecans, almonds, and walnuts evenly in a 15- x 10- x 1-inch jellyroll pan. Bake at 250° for 20 minutes or until lightly toasted. Remove from oven; set aside.
  • Beat egg whites (at room temperature) and salt in a large mixing bowl until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form. Fold in toasted pecans, almonds, and walnuts.
  • Pour melted butter into jellyroll pan. Spread nut mixture evenly over butter. Bake at 300° for 50 minutes, stirring every 15 minutes. Let cool completely. Store in airtight containers.

1/3 cup butter, cut into pieces
1/3 cup light corn syrup
1 teaspoon cardamom
1 teaspoon nutmeg
1/4 teaspoon salt
1 1/2 cups pecan halves
1 cup salted or unsalted whole cashews
2/3 cup blanched whole almonds

Steps:

  • Heat oven to 375°F. Line 15x10x1-inch baking pan with heavy-duty foil. Place butter in foil-lined pan. Place pan in oven for 4 to 5 minutes or until butter is melted.
  • Remove pan from oven. Add corn syrup, cardamom, nutmeg and salt; mix well. Add pecans, cashews and almonds; stir to coat. Spread in single layer in pan.
  • Bake at 375°F. for 10 to 15 minutes or until nuts are golden brown. Remove from oven; immediately stir mixture. Cool 20 minutes or until completely cooled. Store in tightly covered container.
