4 salmon fillets (6 ounces each)
4 garlic cloves, minced
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 tablespoon olive oil
2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
3/4 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 425°. Place salmon in a greased 15x10x1-in. baking pan, skin side down. Combine remaining ingredients; spread over fillets. Roast until salmon just beings to flake easily with a fork, 15-18 minutes.

1 (2 pound) fresh or frozen salmon fillet (see Tip)
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme, crushed
½ teaspoon ground pepper
¼ teaspoon salt
1 lemon, cut into 1/8-inch slices and seeded

Steps:

  • Thaw salmon, if frozen. Preheat oven to 400 degrees F. Line a large baking sheet with foil. Place salmon, skin side down, on foil-lined baking sheet. Sprinkle salmon with chives, thyme, pepper, and salt. Top with lemon slices.
  • Cover salmon with foil. Bake 20 minutes. Uncover and bake 20 to 25 minutes more or until salmon flakes easily when tested with a fork. Serve immediately.
