6 leaves fresh basil
2 sprigs fresh thyme
2 sprigs fresh rosemary
2 sprigs fresh oregano
1?½ cups extra virgin olive oil

Steps:

  • Place basil, thyme, rosemary and oregano in a 12 ounce bottle. Using a funnel, pour oil into bottle. Cover tightly, and refrigerate unused portions. Use within 2 to 3 days.

My Italian husband adores this chicken salad with black olives. It's best made with plenty of fresh herbs! Fabulous served on a romaine lettuce bed with tomato wedges.

½ cup mayonnaise
1 teaspoon minced fresh oregano
1 teaspoon minced fresh basil
1 teaspoon minced fresh rosemary
½ teaspoon minced onion
1 pinch salt and cracked black pepper to taste
4 cooked boneless chicken breast halves, diced
1 (10 ounce) can large pitted black olives, drained and sliced thin

Steps:

  • Whisk mayonnaise, oregano, basil, rosemary, onion, salt, and pepper together in a bowl; add chicken and stir to coat. Fold olives into the mixture.

In this recipe, herbs are the focus, but to use herbs on a grand scale, it helps to know which ones work in that role and which ones don’t. Parsley, obviously, works in abundance: it’s clean-tasting, pleasantly grassy and almost never overwhelming. You can add literally a bunch (bunches!) of it to salad, soup, eggs, pasta, grains or beans. The same is largely true of basil, and you can use other mild herbs — chervil, chives, cilantro, dill, shiso — by at least the handful. (Mint is also useful but will easily take over a dish if you add too much of it.) I put most other herbs — epazote, lavender, marjoram and oregano, rosemary, sage, tarragon and thyme — in the category of strong herbs, which must be used more sparingly than mild herbs. You usually don’t want to use more than a tablespoon or so of strong herbs in a dish. This frittata uses generous amounts of both parsley and basil and lesser amounts of dill, mint, rosemary or thyme.

Homemade crackers made using leftover sourdough discard. This recipe calls for 200 grams of mature starter, which is about what I end up with baking a single loaf. If you have more or less starter, you can easily scale this recipe as needed.

  • In a bowl, combine sourdough starter with flours, olive oil, herbs and salt. Mix to combine, kneading until the dough comes together in a smooth ball.Wrap tightly in plastic wrap and refrigerate for at least 30 minutes or up to 24 hours.Position oven racks in the upper 1/3 and lower 1/3 of oven; preheat to 350 degrees F.
