HEALTHY HOMEMADE ANIMAL CRACKERS - Lau's Healthy Life image

Animal crackers are a childhood favourite! Make them healthier with better-for-you ingredients in 20 minutes! Gluten, grain & dairy-free!

Number Of Ingredients 9

1/4 cup Coconut oil (melted)
2 + 1/2 cups Almond flour
3 tbsp Coconut Flour
1/4 tsp nutmeg
1 Egg
1 tsp Vanilla extract
3 tbsp Maple Syrup (or sugar-free syrup of choice)
Optional: 1 tbsp granulated sweetener to top on the crackers
Optional add-in’s to mix up the flavour: 1 tsp almond extract (1/2 tsp cinnamon, 3 tbsp honey (instead of maple syrup), etc.)

Steps:

  • Preheat the oven to 350 degrees F & line a baking tray with parchment paper.
  • Add the melted coconut oil to a mixing bowl with the flours & nutmeg, mixing well.
  • Add the rest of the ingredients & form a dough.
  • Let the dough sit for 10 minutes, then roll out using two pieces of parchment paper & a rolling pin until your desired thickness. I like about 1/4th of an inch, but if you want thinner crackers you can roll it out thinner. Roll it out less for thicker crackers.
  • You can use animal cracker cookie cutters (linked above) or if you don’t have these you can simply cut them into squares & they will be just as delicious.
  • TIP: I like to regularly put a bit of coconut oil on the bottom of the cookie cutters (or a knife if cutting the dough) to prevent the dough from sticking to your utensils.
  • Carefully place the crackers on the prepared baking tray & bake for about 5 minutes (the longer you bake the crunchier they will get).
  • Let cool & store in an air sealed container, enjoy!

As it turns out, churning out a homemade rendition of this cookie jar classic isn't difficult at all. In fact, these animal cracker cookies would make a great recipe to tackle with little kitchen helpers. Swapping white flour for a blend of white whole-wheat and oat flours provides fiber and a delightfully nutty sweetness that you aren't going to find on the supermarket shelf. I used a set of mini animal-shaped cookie cutters from Wilton, but you can make them in whatever shapes you and your crew like best. Be sure to store the cookies in an airtight container once they've cooled. They should keep fresh for up to one week.

Yield Serves 16 (serving size: 9 cookies)

Number Of Ingredients 10

6 ounces white whole-wheat flour (about 1 1/4 cups)
3 1/2 ounces oat flour (about 1 cup)
3/4 ounce milk powder (about 2 Tbsp.)
1/2 teaspoon baking powder
1/2 teaspoon salt
9 tablespoons unsalted butter, softened
1/4 cup sugar
3 tablespoons honey
1/2 teaspoon vanilla extract
1 large egg

Steps:

  • Combine first 5 ingredients in a bowl, stirring with a whisk until combined; set aside. Combine butter, sugar, and honey the bowl of a stand mixer fitted with a paddle attachment; beat at medium speed 3 minutes or until light and fluffy. Add vanilla and egg; beat until just combined. Add flour mixture a little at a time, beating until combined. Press dough into a flat disc; wrap tightly in plastic wrap. Refrigerate 1 hour. Preheat oven to 350°F. Transfer dough to a lightly floured surface; roll to 1/4-inch-thickness. Cut the dough into shapes using miniature animal-shaped cookie cutters. Transfer cookies to 2 parchment paper-lined baking sheets. Bake cookies at 350°F for 7 to 8 minutes or until lightly golden brown, rotating pans halfway through baking. Cool 1 to 2 minutes on baking sheet; transfer cookies to wire wracks to cool completely. Repeat with remaining dough scraps. Transfer cooled cookies to an airtight container.
