Quick and delicious Chinese-style rice noodles.

Number Of Ingredients 7

1 (8 ounce) package dried rice noodles
2 tablespoons vegetable oil
1 clove garlic, minced
1 tablespoon soy sauce
½ tablespoon chili sauce
salt and pepper to taste
1 green onion, chopped

Steps:

  • Bring a large pot of water to a boil. Add rice noodles, and cook for 2 to 3 minutes or until al dente; do not overcook, or they will become mushy. Drain.
  • Heat oil in a large skillet over medium heat. Saute garlic until tender. Stir in noodles, and season with soy sauce, chili sauce, salt and pepper. Sprinkle top with chopped green onion.

When it comes to Guilin, I have to talk about Guilin rice noodles, the streets and alleys, and rice noodle shops everywhere. With the changes of the times, the taste of Guilin rice noodles has become more and more diverse, but the taste is not as good as before. I vaguely think of the time when I bought rice noodles when I was young. In the early 1990s, the conditions at home were not very rich. I had to cook rice noodles at home. Every time I heard Uncle Bearded’s thick and long sentence "choose rice noodles, choose rice noodles" Slightly (choose the Guilin dialect, which means to change)" I will measure a catty of rice from the rice jar at home, get the rice noodles I want to eat from Uncle Beard, and then rush home quickly to let my mother cook it. Delicious ingredients, a bowl of delicious food. In my free time, I would go to the vegetable market to buy plain rice noodles and cook the rice noodles in tomato sauce. Especially in the morning of autumn and winter, after eating the rice noodles, and then drinking all the soup, it is really full in the stomach and warm in the heart.

100 g Vegetarian rice noodles
100 g pork
100 g peanut
1 piece tomato
10gram chili sauce
10gram Capers
5 grams chopped green onion
10gram Cooking oil
10gram Oyster sauce
1 g salt

Steps:

  • Peanuts shelled, pork chopped into minced meat, tomato diced
  • Pour peanuts in a cold pot and stir fry for 2 minutes
  • When the peanuts in the pot rattle, add a small amount of cooking oil, and see that the peanut skin is cracked. Turn off the heat. Take out the peanuts and let cool for later use.
  • Put a little bit of cooking oil in the hot oil pan, pour in the minced meat and stir fry for 2 minutes, stir fry with a spatula and crush it.
  • Stir-fry the minced meat with moisture, add the diced tomatoes and stir fry on low heat
  • Stir-fry until the diced tomatoes are juiced, add salt, and season with oyster sauce
  • Add 2 small bowls of water, if you want the soup to be thicker, you can use less water
  • Turn off the fire
  • Fill a bowl with warm water, and wash the rice noodles loosely. The action should be lighter during washing. Freshly squeezed rice noodles are softer and do not have the toughness of dry rice noodles
  • Prepare all kinds of ingredients you like. The more common ingredients for Guilin rice noodles are peanuts, capers, chopped green onion, chili, etc.
  • A combination of meat and vegetables, nutritious and delicious
  • Ingredients can be added or subtracted as you like
