Who says only meats need apply? Barbecue a salad -- down to the polenta croutons.

2 teaspoons whole-grain mustard
2 tablespoons red-wine vinegar
1/4 cup minced shallot
1/4 cup olive oil, plus more for drizzling
Salt and pepper
1 log (18 ounces) prepared polenta
1 halved head romaine
1 quartered head radicchio

Steps:

  • Whisk mustard, vinegar, shallot, and 1/4 cup olive oil. Season with salt and pepper.
  • Heat grill to high. Slice polenta into thirds lengthwise, drizzle with olive oil, and season with salt and pepper. Grill polenta until lightly charred, 2 minutes per side, then cut into croutons. Drizzle romaine and radicchio with olive oil and season with salt and pepper. Grill lettuces, cut sides down, until slightly wilted and charred, about 1 minute. Arrange greens and croutons on a platter and drizzle with vinaigrette.

This grilled salad is maybe the greatest salad in the world.

Number Of Ingredients 6

4 strips bacon
1 head iceberg lettuce
olive oil, or as needed
1 cup cherry tomatoes, halved
½ red onion, sliced
½ cup blue cheese dressing

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels and let cool. Chop bacon into bits.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Cut the lettuce into 4 wedges. Brush the wedges with olive oil.
  • Cook lettuce on the preheated grill, cut-side down, about 2 minutes. Turn lettuce and cook until warmed through and slightly charred, 2 minutes more. Discard any wilted leaves.
  • Place each lettuce wedge on a plate. Top with tomatoes, onion, and bacon. Drizzle on blue cheese dressing and serve.
