4 live lobsters, 1 to 2 pounds each
Unsalted butter, melted (optional)
Lemon wedges

Steps:

  • Kill lobsters by plunging them headfirst into salted boiling water and cooking for 1 minute. Remove, and drain.
  • Place lobsters on a medium-hot grill. Cook for 8 to 10 minutes, turning occasionally to avoid burning the shells.
  • Crack a claw to see if it is fully cooked (the meat should be opaque). If not, detach claws, and return to grill for a few minutes more. Using kitchen scissors, split lobsters lengthwise by cutting along underside of tail, leaving back of shell intact. Scrape out red coral, if any, and green tomalley, and combine with melted butter for a dipping sauce, if desired. Keep lobsters warm on a platter covered with foil until ready to serve. Garnish with lemon wedges and serve with melted butter, if desired.

Make sure your catch of the day tastes as fresh as possible: When buying lobsters, look for ones that aren't lying idle in their tanks and have both of their claws. Grilling lobster is the easiest way to cook it. Just be sure to keep an eye on the grill. Overcooking can happen fast. As soon as the lobster has turned opaque, remove it from the heat. It will continue to cook a few more minutes in the hot shells. Lemon butter is the classic dipping sauce for luxurious lobster. We've swapped the butter for olive oil. You could add some finely chopped chives and parsley to the blend for added flavor.

1 pound(s) Uncooked lobster meat start with two 1 1/4 pound whole lobsters
2 tsp Olive oil
3 medium clove(s) Garlic clove(s) mashed
3 Tbsp Fresh lemon juice
0.125 tsp Table salt or to taste
0.125 tsp Black pepper or to taste

Steps:

  • Preheat grill. To prepare lobsters, cut off heads, split tails and crack claws; set aside.
  • Stir together olive oil, garlic and lemon juice; season to taste with salt and pepper. Toss tails and claws with half the olive oil mixture.
  • Grill lobster pieces, turning and moving them as they cook until shells are charred and meat is firm and opaque, about 8 minutes.
  • Crack lobsters and dip meat in remaining olive oil mixture. Yields about 3 ounces lobster meat and 2 teaspoons sauce per serving.
