[Simplot Harvest Fresh™ Avocados Individually Wrapped Avocado Halves, Frozen,Lox, cut in strips,Red onions, pickled,Cotija cheese, crumbled,Dill weed, fresh]

Steps:

  • Thaw avocado according to package instructions. Grill avocado, cool and slice. Arrange one grilled and sliced avocado onto a plate. Top with 1 oz. lox in a decorative pattern. Add 1 oz. pickled red onions leaving some juice as a light dressing. Garnish with 1/4 oz. Cotija and 1 tsp. fresh dill weed.

Yield Makes 6 servings

Number Of Ingredients 12

1 large peach, peeled and chopped
6 tablespoons canola oil
2 tablespoons Champagne vinegar or white vinegar
½ teaspoon honey
¼ teaspoon kosher salt
? teaspoon freshly ground pepper
3 large peaches, peeled and halved
2 firm avocados, peeled and quartered
1 tablespoon canola oil
Salt and pepper to taste
6 cups loosely packed arugula
½ cup freshly grated Manchego or Parmesan

Steps:

  • Preheat grill to 350° to 400° (medium-high) heat. Process 1 large peach, peeled and chopped; 6 Tbsp. canola oil; vinegar; and honey in a blender until smooth. Add 1/4 tsp. kosher salt and 1/8 tsp. freshly ground pepper. Gently toss 3 large peaches, peeled and halved, and avocados in 1 Tbsp. canola oil and salt and pepper to taste. Grill, covered with grill lid, 2 minutes on each side or until charred. Slice and serve over arugula. Top with peach vinaigrette and Manchego or Parmesan.

  • 1. MAKE THE LEMON-HERB CHICKEN: Place the chicken in a large resealable plastic bag. In a medium bowl, whisk together the olive oil, lemon zest, lemon juice, oregano, dill and parsley. Pour the marinade into the bag, seal it and refrigerate for 30 minutes. 2. MAKE THE SALAD: Meanwhile, in a medium saucepan, bring the barley and chicken broth to a simmer over medium heat. When it comes to a simmer, cover the pot and cook until the barley is tender, 35 to 45 minutes. Drain and reserve. 3. In a medium bowl, whisk together the lemon zest, lemon juice, mustard and oregano. Gradually stream in the olive oil and whisk well to combine. Season with salt and pepper. 4. Prepare your grill for high heat. Remove the chicken from the marinade and season with salt and pepper. 5. Grill the chicken until well charred on both sides and fully cooked through, flipping as needed, 10 to 12 minutes. Remove the chicken from the grill and reserve. 6. In a large bowl, toss together the lettuce, onion and tomatoes. Add the dressing and toss well to coat. 7. Slice the chicken and serve on top of the salad alongside the avocado.
