Green Tomato Chowchow Recipe: How to Make It image

My grandmom’s long-cherished chowchow has Pennsylvania Dutch roots. The pickled relish of cabbage, onions and peppers is tart and sweet with a smidge of spice. —Sharon Tipton, Casselberry, Florida

Number Of Ingredients 9

3 pounds green tomatoes (about 5 medium)
2 tablespoons salt
1 medium head cabbage
1 pound onions (about 3 medium)
1 pound green and sweet red peppers (about 3 medium), seeded
1 jalapeno pepper, seeded and chopped, optional
4 cups cider vinegar
2-3/4 cups sugar
4 teaspoons mixed pickling spices

Steps:

  • Chop tomatoes. Transfer to a strainer and sprinkle with salt; let stand 10 minutes. Meanwhile, chop cabbage, onions and green and red peppers. Place in a Dutch oven. Add drained tomatoes to pan and, if desired, jalapeno., Stir in vinegar and sugar. Place pickling spices on a double thickness of cheesecloth. Gather corners to enclose spices; tie securely with string. Add to pan. Bring to a boil. Reduce heat; simmer, uncovered, until thickened, stirring occasionally, 1 to 1-1/2 hours. Discard spice bag. Cool to room temperature; refrigerate leftovers.

This speedy, kid-friendly supper is a great way of cramming a good variety of vegetables into one meal

3 garlic cloves, crushed
good chunk fresh root ginger, grated
1 red chilli, deseeded and chopped
1 tbsp soy sauce
2 tbsp tomato purée
2 chicken breasts, cut into chunky strips
3 blocks dried egg noodles
½ a head broccoli, broken into florets
3 carrots, cut into thin sticks
1 tbsp vegetable oil
300g pack beansprout
3 spring onions, halved and sliced into long strips
1 tbsp oyster sauce

Steps:

  • Mix together the garlic, ginger, chilli, soy sauce and tomato purée, then add the chicken and leave it to marinate while you prep the rest of the ingredients.
  • Boil a large pan of water, add the noodles, broccoli and carrots, then cook for 4 mins before draining.
  • Heat the vegetable oil in a wok, tip in the chicken and its marinade, then stir-fry for 4-5 mins until cooked. Toss in the noodles, vegetables, beansprouts and spring onion to warm through, then mix the oyster sauce with 2 tbsp water and stir this in just before serving.

I got lucky on the day I picked up a box of chow mein from this huge Chinese chain because they had just run out. There are only seven ingredients, and the prep work is low-impact. I used dry chow mein noodles (also called Chinese stir fry noodles) which are easy to find and cheap, and dark soy sauce to get that great caramel color.   • Remove the sheet pan from the oven (the noodles should be crisp on the bottom and around the edges) and add the bok choy to the pan. Return the sheet pan to the top rack of the oven and bake for 4 to 7 minutes until the greens are vibrant with crispy edges, and the top of the noodles are crispy. Drizzle with the remaining marinade, top with cilantro leaves and serve.
