This 100% VEGAN Cheesy Gordita Crunch is about to blow your damn mind... I promise! Even better than the real thing.

Number Of Ingredients 9

1 lb vegan ground beef
1 packet taco seasoning mix
2 cups shredded follow your heart cheddar
2 cups shredded romaine lettuce
6 hard taco shells
6 gordita shells
1 cup follow your heart ranch dressing
2-3 tablespoons pickled jalapeno brine
3-4 tablespoons finely chopped pickled jalapenos

Steps:

  • Mix together your sauce ingredients & place in the fridge (covered) until ready to use.
  • Brown ground beef in a large skillet over medium-high heat. Stir in the taco seasoning with 1 ¼ cups of water. Reduce heat and simmer until the water is almost gone and the mixture is thick.
  • Layout a gordita shell onto a microwave safe plate. Spread a layer of cheese over the top of the gordita.
  • Place into the microwave and microwave for 30 seconds or until the cheese has melted. Place a hard taco shell onto one side of the gordita. Fold the gordita around the taco shell and press so it sticks to the cheese.
  • Add some ground beef to the taco shell and top with some of the sauce, romaine lettuce, and cheddar cheese.
  • Repeat with remaining shells.

Gorditas are similar to pita pockets but much heartier! Can be stuffed with just about anything! I make them with a mixture of corn masa mix and all-purpose flour.

1 cup masa harina (instant corn masa mix)
1 cup all-purpose flour
1 teaspoon salt
1 tablespoon shortening
1 cup hot water
1 cup oil for frying

Steps:

  • In a large bowl, stir together the masa harina, salt and hot water. Gradually mix in the shortening and flour. If the dough seems dry, add a little more hot water. Form the dough into balls that will fit into the palm of your hand.
  • Line a work surface with waxed paper or plastic. Sprinkle with water. Flatten balls on the wet surface until about 1/4 inch thick.
  • Heat a griddle or comal over medium heat. Cook the gorditas on each side until they are cooked through.
  • Heat oil in a large heavy skillet over medium to medium-high heat until hot. Fry each gordita until puffed, pressing it down into the oil occasionally with a spatula. Drain briefly on paper towels, cut the tips off and stuff full of your favorite foods.
