Southwestern Spoon Bread – Can't Stay Out of the Kitchen image

Southwestern Spoon Bread is a cross between Corn Casserole and a Mexican style cornbread. The texture is almost soufflé-like. It includes diced green chilies and cheddar cheese providing just enough heat and just enough savory flavor to be succulent and amazing. It's the perfect accompaniment for chili, stew or soup. This version is gluten free.

15 oz. can cream-style corn ((undrained) )
1 cup stone-ground cornmeal
3/4 cup half-and-half ((or 2% milk))
1/3 cup avocado oil ((or vegetable oil))
2 large eggs (slightly beaten)
1 tsp. baking powder
1/2 tsp. sea salt
4 oz. can diced green chilies (drained)
4 oz. sharp cheddar cheese (shredded)

Steps:

  • Preheat oven to 375º.
  • In a large mixing bowl, combine corn, cornmeal, milk (or half-and-half), oil, eggs, baking powder and salt.
  • Spread half of the batter into a greased 8x12” baking dish.
  • Sprinkle chilies and cheese evenly over top of batter.
  • Spread remaining batter over top of chilies and cheese.
  • Bake at 375º for about 45 minutes or until just set.
  • Serve immediately with a spoon.

Sweet maple butter tops this souffle-like cornbread.

Spoon Bread
3 cups milk
1 cup yellow cornmeal
2 tablespoons Land O Lakes® Butter softened
1 teaspoon baking powder
1/2 teaspoon salt
3 large Land O Lakes® Eggs separated
Maple Butter
1/2 cup Land O Lakes® Butter softened
2 tablespoons maple syrup
1/8 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F. Grease 2-quart casserole dish. Set aside. 
  • Combine 2 cups milk and cornmeal in 2-quart saucepan. Cook over medium heat, stirring constantly, 8-11 minutes or until all milk is absorbed and mixture is of cooked cereal consistency. Remove from heat. Add 2 tablespoons butter, baking powder and salt; stir until well mixed and butter is melted. Beat in egg yolks and remaining milk with whisk until smooth. Transfer to bowl; set aside.
  • Beat egg whites in another bowl at high speed, scraping bowl often, 1-2 minutes or until stiff peaks form. Gently stir into cornmeal mixture until smooth and no lumps remain.
  • Carefully pour into prepared pan. Bake 40-50 minutes or until golden brown and top springs back when touched lightly in center.
  • Stir together all maple butter ingredients in bowl; serve with warm spoon bread.
