Preheat your oven to 350°F. Using a serrated knife, slice your loaf into 1/2 inches slices taking care not to cut through the base of the bread. Turn the bread 90° and repeat. Your bread should still be in one piece, connected at the base of the loaf. Combine the softened butter and garlic in a small bowl. Using a butter knife, smear the garlic butter onto each slice of bread taking care to gently pry open each slice so that the loaf stays in one piece. Once you have done this and used up all the butter, stuff each opening with some of the grated cheese. Place your stuffed bread loaf onto the center of a large piece of aluminum foil. Bring the sides of the aluminum foil together on top of the loaf and seal together. Bake on a baking tray in the oven for 25 minutes. Remove the tray from the oven and open the foil seam at the top. Push back the foil so the bread is exposed. Return to the oven and bake for an additional five minutes. Remove from the oven and enjoy immediately, while the cheese is still gooey and the bread is still warm.

- 1 crusty loaf (sourdough or Vienna);
- 1 cup Mozzarella cheese, shredded;
- 1 stick unsalted butter, melted;
- 2 garlic cloves, minced;
- ¾ tsp salt;
- 1 tbsp fresh parsley, chopped.

Steps:

  • Preheat oven to 350°F.
  • Make diagonal cuts in the bread at a distance of 1 inch from one to the other cut. Don't cut the bread completely, leave ¼ inch on the bottom crust.
  • In a bowl, mix melted butter, minced garlic, and salt until combined. Add finely chopped parsley and stir completely.
  • Pour butter mixture evenly between the cut cracks. If you have remaining butter mixture, brush the bread. Then, stuff evenly all the bread cracks with shredded mozzarella.
  • Place stuffed bread on a large piece of aluminium foil and wrap it. Bake in the preheated oven for 20 minutes. Then, unwrap bread and bake for additional 5-10 minutes until mozzarella cheese completely melts. Serve warm.
