Frozen tofu stewed fish recipe - Simple Chinese Food image

One or two pieces of tofu are often frozen in the refrigerator. After the tofu is frozen, there is almost no loss of nutrients such as protein and calcium. The voids inside are like sponges, and the taste is also elastic. Frozen tofu and fish are stewed together, and the soup is completely absorbed by the frozen tofu. 300 grams carp
100 g frozen tofu
1 scoop oil
1 scoop salt
3 slices ginger
2 petals garlic
1 piece star anise
2 tablets Cinnamon
2 tablets Bay leaf
10 capsules pepper
1 scoop Doubanjiang
15ml Soy sauce
1 scoop Cooking wine
1 scoop Chicken Essence
1 scoop Sugar
5 Dried red chili
Right amount water

Steps:

  • After the fish is cleaned, put on salt and cooking wine and marinate for 15 minutes
  • Frozen tofu thawed
  • Prepare ginger, garlic, star anise, cinnamon, pepper, dried red pepper, etc.
  • Heat oil in the pan and add the fish
  • Fry the fish until golden on both sides
  • Put it in a bowl and set aside
  • Leave the bottom oil in the pot, add various ingredients and fry until fragrant
  • Enter Pixian Douban
  • Stir-fried red oil
  • Put the fish in the pot
  • Add appropriate amount of water
  • Join soy sauce
  • Add soy sauce
  • Add white sugar
  • Add cooking wine
  • Add frozen tofu, boil on high heat, then simmer for half an hour on low heat
  • Add salt to taste
  • Finally, add chicken essence and put it in a bowl and you can eat it

500 g white fish fillet (halibut/cod/sole or other), cut into pieces
1 egg white
1 tsp cooking wine
1 tbsp corn starch
1 tsp ginger root, grated
1/2 teaspoon salt
1/2 teaspoon white pepper
2 tsp vegetable oil
Spring onion, chopped, to taste
1 red chilli pepper, chopped
Fresh lime, to serve
Fish sauce

Steps:

  • Put the fish fillet, egg white, ginger, wine, starch, and salt and pepper into a food processor and blend into an even paste.
  • Bring some water to boil in a steamer.
  • Rub a small heatproof bowl or glass tray with 1 Tbsp vegetable oil, and fill with the fish mixture. Place inside steamer and steam for 15 min.
  • Remove the fish tofu from steamer and set aside to cool.
  • Bring a frying pan to medium heat. Slice the fish tofu into small pieces (about 3 x 3 cm) and fry in the remaining oil for 2-3 min, until golden on all sides. Add a splash of fish sauce at the end, while still in the pan.
  • Serve hot with a squeeze of lime, decorated with spring onion and chili pepper.

When cool enough to handle, gently squeeze and pat dry. If using frozen tofu, use firmer pressure to squeeze out water. Cut tofu into bite-sized pieces, then toss together with soy sauce, sesame oil, and black pepper in a medium bowl. Once liquids are absorbed, toss tofu with cornflour.  In a large pan over medium-high heat, heat 2 tablespoons oil. Add tofu and let cook until golden on all sides, turning occasionally, 7 to 8 minutes. Season with salt and pepper, and remove from pan and set aside.  Heat remaining 1 tablespoon oil and add in garlic and ginger and cook until fragrant, 1 minute. Stir in string beans, carrots, broccoli, red pepper, and spring onions. Cook until tender, about 8 to 10 minutes. Season with salt and pepper. In a small bowl, stir together soy sauce, sesame oil, water, brown sugar, and cornflour. Return tofu to pan and add sauce mixture to pan. Stir and cook until slightly thickened, 2 minutes.
