- 1. Preheat the oven to 375?F. Grease the cavities of a 12-cup muffin tin with nonstick cooking spray. 2. In a large saut? pan, heat the olive oil and butter over medium heat. 3. Add the onion and saut? until tender and caramelized, 25 to 30 minutes. Season with salt, pepper and thyme. 4. Add the beef broth and bring the mixture to a simmer. Simmer until the liquid has reduced almost entirely. Stir in the heavy cream. 5. Roll out the puff-pastry dough a little to flatten it. Cut the dough into 2?-inch squares and then press a square into each of the cups of the prepared muffin tin. 6. Place 2 tablespoons of the onion filling into each cup and then top with 1 tablespoon grated Gruy?re. 7. Bake until golden brown, 20 to 22 minutes. Serve immediately.

- Heat oil in a large skillet over medium. Add onions, salt, sugar, and pepper; cook, stirring often, for 5 minutes. Reduce heat to medium-low; cook, stirring often, until onions are golden brown and very tender, about 25 minutes. Stir in sherry, parsley, and thyme; cook, stirring often, until fragrant, about 1 minute. Remove from heat. Stir in 1 3/4 cups of the cheese; set aside.
- Preheat oven to 350°F. Place phyllo shells on a baking sheet, and fill each with about 1 tablespoon of the onion mixture; top each cup with some of the remaining cheese. Bake in preheated oven until cheese is melted, about 10 minutes. Place on a serving platter, and sprinkle with chives. Serve hot.
