1 (10.5 ounce) can beef consomme
1 cup water
1 pound thinly sliced deli roast beef
8 slices provolone cheese
4 hoagie rolls, split lengthwise

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Open the hoagie rolls and lay out on a baking sheet.
  • Heat beef consomme and water in a medium saucepan over medium-high heat to make a rich beef broth. Place the roast beef in the broth and warm for 3 minutes. Arrange the meat on the hoagie rolls and top each roll with 2 slices of provolone.
  • Bake the sandwiches in the preheated oven for 5 minutes, or until the cheese just begins to melt. Serve the sandwiches with small bowls of the warm broth for dipping.

1 medium sweet onion, thinly sliced
Cooking spray
2 teaspoons salt-free onion-herb blend
1/2 cup plus 2 tablespoons water
1 cup reduced-sodium beef broth
8 oz thinly sliced cooked reduced-sodium roast beef (from deli)
4 hoagie buns (2.5 oz each), split
4 slices (3/4 oz each) reduced-fat Swiss cheese, cut in half

Steps:

  • Heat oven to 500°F. Heat 12-inch skillet over high heat. Spray onion with cooking spray; add to skillet. Stir in 1/2 teaspoon of the herb blend. Cook 11 to 12 minutes, stirring frequently and adding water 2 tablespoons at a time, until onion is golden brown.
  • Meanwhile, in 2-quart saucepan, heat broth and remaining 1 1/2 teaspoons herb blend over medium heat until hot. Remove from heat; add beef, pushing beef down into liquid until covered. Let stand 5 minutes.
  • Place buns, cut sides up, on ungreased cookie sheet. Bake 4 minutes or until lightly toasted.
  • Remove beef from broth; reserve broth. On bun bottoms, place beef, onion and cheese; cover with bun tops. Serve with warm broth for dipping.

  • Build the sandwiches: Arrange slices of bread in a single layer on a work surface. Brush the top sides of each piece of bread with the butter. Flip the bread so the butter side is face down on the surface. Top each piece of bread with 2 pieces of provolone cheese. Top half of the slices of bread with a layer of roast beef and drizzle with mustard. Sprinkle with french onions. Sandwich with the remaining pieces of bread with the provolone side in the sandwich and butter side facing out.  Heat a large skillet over medium-low heat. Place 2 sandwiches in the skillet and cook until the bottom slice of bread is golden and the cheese is starting to melt, about 5 minutes. Carefully flip the sandwich and cook until golden underneath, about 5 minutes more. Repeat with remaining sandwiches.  Meanwhile, make the au jus: Melt the butter in a medium skillet over medium heat. Stir in garlic and thyme; cook until fragrant, 1 to 2 minutes. Whisk in the beef broth, mustard, and Worcestershire sauce. Increase heat to high and bring to a boil. Season with salt, if necessary and pepper. Remove from heat and keep warm.  Sprinkle the au just with chives and serve the hot sandwiches sliced with the warm au jus.

  • Preheat oven to 450°. Rub beef all over with olive oil and place in roasting pan. In a small bowl, stir together salt, pepper, oregano, and sage.  Rub spice mix all over beef. Roast for 20 minutes or until a meat thermometer registers 125° in the thickest part of the ribeye. Set aside on a cutting board to rest and turn oven down to 350°. Meanwhile, make jus: Place roasting pan (with beef drippings) over stove top burner and turn to medium heat. Add onion and cook until soft, 3 minutes. Add garlic and thyme and cook until fragrant, 1 minute longer. Add beef broth and Worcestershire sauce and bring up to a simmer. Cook until thickened slightly, 8 to 10 minutes more. When ready to serve, thinly slice beef. Fill each roll with beef and top with provolone. Bake until cheese is melty, 10 minutes.  Serve with jus on the side for dipping.
