This Fork Tender Chuck Roast in Gravy is so tender, it'll pull part with your fork. It's absolutely delicious and you'll have dinner on the table in just a couple of hours. The perfect Sunday dinner.

3 pound Boneless Chuck Roast
1 cup All-Purpose Flour
1 1/2 teaspoon Ground Black Pepper
1 teaspoon Kosher Salt
1 teaspoon Dried Oregano
2 tablespoon Butter
1 Onion
2 Carrot
2 1/2 cup Beef Broth
1/3 cup Balsamic Vinegar
4 Sage Leaves
2 1/2 tablespoon Salted Butter
2 tablespoon All-Purpose Flour
1/4 cup Water
1 1/2 cup Mushroom
to taste Salt and Pepper

Steps:

  • Preheat oven to 425 degrees F (218 degrees C).
  • Into a mixing bowl, add All-Purpose Flour (1 cup), Kosher Salt (1 teaspoon), Ground Black Pepper (1 1/2 teaspoon), and Dried Oregano (1 teaspoon). Whisk together.
  • Coat the Boneless Chuck Roast (3 pound) in the flour mixture.
  • Into a pot over medium heat, add Butter (2 tablespoon). Once melted, add the chuck roast. Cook for 3-4 minutes.
  • Flip the chuck roast and cook for an additional 3-4 minutes. Sear the edges.
  • Add Onion (1), Carrot (2), Beef Broth (2 1/2 cup), Balsamic Vinegar (1/3 cup), and Sage Leaves (4). Mix, then bring to a boil.
  • Cover the pot. Bake for 1 hour and 45 minutes.
  • Return the pot to the stove and bring to a boil. In a small bowl, mix Salted Butter (2 1/2 tablespoon) and All-Purpose Flour (2 tablespoon), then add to the pot. Add Water (1/4 cup). Whisk to combine.
  • Add Mushroom (1 1/2 cup). Turn heat to low and let simmer for 10 minutes. Season with Salt and Pepper (to taste).
  • Serve warm with sides of choice. I served mine with spinach and mashed potatoes!

The title of the recipe says it all. I've made this many times for both friends and family and everyone that's tasted it has loved it. You need to use 1" or thicker boneless loin chops. I sometimes double the sauce because its so delicious. I wish I could take credit for this recipe, but its from my favorite cookbook, that will remain nameless since my dog ate the cover and I can't remember the title.

1 tablespoon vegetable oil
6 boneless pork loin chops
1 lb sliced mushrooms
2 minced garlic cloves
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground black pepper
3 tablespoons flour
1 cup dry white wine
1 cup cream
1/2 cup chicken broth

Steps:

  • Heat oil in a large skillet over medium-high heat add chops and brown all over.
  • Arrange chops in a 13" x 9" baking dish.
  • Add mushrooms to drippings in the skillet and cook over medium-high heat without stirring for 3 to 4 minutes.
  • Stir in garlic, salt, oregano, basil and pepper.
  • Sprinkle flour over mushrooms and stir to moisten.
  • Pour in wine and bring to a boil.
  • Add cream and chicken broth, simmer, stirring, to thicken.
  • Pour over chops.
  • Cover tightly with a double layer of foil.
  • Bake at 350 for 2 to 2 1/2 hours until pork chops are fork tender.
