2 cups water
1 cup black (forbidden) rice
¼ teaspoon salt
2 tablespoons soy sauce
2 teaspoons sesame oil
1 lime, juiced
½ teaspoon sriracha sauce, or more to taste
1 cup lightly salted cashews
½ red bell pepper, chopped
½ yellow bell pepper, chopped
4 scallions, chopped
salt and ground black pepper to taste

Steps:

  • Combine water, black rice, and salt together in a saucepan. Bring to a boil; reduce heat to low, cover, and simmer until rice is tender, 30 to 45 minutes.
  • Whisk soy sauce, sesame oil, lime juice, and sriracha sauce together in a large bowl. Add cashews, red bell pepper, yellow bell peppers, and scallions; toss well to combine. Add black rice; stir until salad is well-mixed. Season with salt, black pepper, and sriracha.

3 1/2 cups water
2 tablespoons tamari
3 tablespoons sesame oil
1 lb roasted diced sweet potato
3/4 cup diced red pepper
3/4 cup diced yellow pepper
1/2 bunch sliced scallion

Steps:

  • Bring rice, water and pinch of salt to a quick bowl, cover and lower heat to a simmer for 30 minutes.
  • Let rice sit while you whisk together sesame oil and tamari.
  • While rice is still warm toss in the sesame oil and tamari mixture.
  • Let cool, then add sweet potatoes, red peppers, yellow peppers, scallions, and salt, pepper to taste.

Meanwhile whisk sesame oil, tamari and lime juice together and set aside. While rice is still warm, (so that flavors will be absorbed) toss in the sesame oil and tamari mixture. Set aside to cool.
