Baked Parmesan Fish With Pasta Recipe - Food.com image

I made this for dinner tonight and it was really good! I used tilapia for the fish. There is really no "sauce" for the pasta so I tossed the noodles with melted butter for some extra flavor, then topped them with the fish and mushroom mixture.

Number Of Ingredients 9

1/3 cup grated nonfat parmesan cheese
1 teaspoon all-purpose flour
3 fresh thyme sprigs, leaves removed and crushed
4 white fish fillets (6 oz. each)
8 ounces angel hair pasta
1 medium onion, chopped
1 cup mushroom cap, halved
1/2 cup green onion, finely sliced
2 garlic cloves, crushed

Steps:

  • Combine cheese, flour and thyme in a shallow bowl. Gently coat each piece of fish on all sides in the mixture.
  • Place fillets in a baking pan with rack. Bake in a 350 degree oven for 20 minutes, or until fish flakes easily when tested with a fork.
  • Cook pasta as directed on package; drain. Keep warm.
  • Heat large nonstick skillet over medium-high heat. Add onion, mushrooms, green onions and garlic. Cook, stirring frequently, until onions are tender. Season with salt and pepper to taste.
  • Place cooked pasta on oven-warmed plates. Place fish over pasta. Top with mushroom mixture. Garnish with thyme if desired.

7 ounces Spaghetti
4 tablespoons olive oil
2 red Bell pepper (seeds removed, chopped)
1 onion (finely chopped)
2 cloves garlic (finely chopped)
1.667 cups tomato passata
5 tablespoons tomato puree
0.375 cup water
2 teaspoons sugar
0.5 teaspoon Chili flakes (optional)
7 ounces cherry tomatoes (halved)
3.5 ounces baby Spinach
salt
freshly ground Black pepper
4 Cod (about 175g each)
2 tablespoons Pine nuts
1 tablespoon chopped Basil

Steps:

  • Bring a large pan of salted water to a boil and cook the spaghetti until almost, but not quite tender
  • Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a baking dish.
  • Heat 2 tablespoons oil in a frying pan and cook the peppers and onions for about 5 minutes, until softened. Add the garlic and cook for a further 2 minutes.
  • Stir in the tomato passata, tomato puree, water, sugar and chilli flakes, if using. Bring to a boil, then reduce the heat and simmer for 10 minutes, stirring occasionally.
  • Add the tomatoes, just cooked pasta and spinach, stir well and season to taste with salt and black pepper.
  • Put into the baking dish and place the cod fillets on top. Season to taste with salt and black pepper and drizzle with the remaining oil.
  • Scatter the pine nuts over the top and bake for 15-20 minutes, until the fish is opaque and cooked through. Sprinkle with basil and serve immediately.
