Chinese Fish Recipe: How to Make It - Taste of Home image

"A Chinese friend gave me this recipe for flavorful fish," writes Ruth Solyntjes of Waterville, Minnesota. "She didn't know U.S. measurements, so I'd hold up a plastic teaspoon and ask, 'How much?' for each ingredient she used."

4 orange roughy fillets (6 ounces each)
1 tablespoon canola oil
1 cup water
1/3 cup sliced green onions
2 teaspoons cider vinegar
2 teaspoons reduced-sodium soy sauce
2 garlic cloves, minced
1/2 teaspoon Chinese five-spice powder
1/8 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1 teaspoon minced fresh gingerroot
1/2 teaspoon sesame oil

Steps:

  • In a large nonstick skillet, cook fish in canola oil for 2 minutes. Turn and cook 2 minutes longer. Add the next nine ingredients. Cover and simmer for 4 minutes or until fish flakes easily with a fork. Sprinkle with sesame oil.

The fish fillet is oven-baked in parchment paper with fragrant sesame oil and fresh ginger, then the sauce is drizzled onto the fish at the last minute just before serving. Served with scallions and cilantro on the top, fantastic flavor. Delicious, easy, and healthy!

1 Fish Fillet
1 teaspoon Sesame Oil
to taste Salt and Pepper
1/2 inch Fresh Ginger
1 tablespoon Water
1 tablespoon Soy Sauce
1 teaspoon Shaoxing Cooking Wine
1 teaspoon Sesame Oil
1/2 teaspoon Granulated Sugar
1 dash Ground White Pepper
1 stalk Scallion
1/4 cup Fresh Cilantro Leaf
to taste Red Chili Pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place the Fish Fillet (1) on a piece of parchment paper horizontally. Drizzle Sesame Oil (1 teaspoon) over the fish, then season with Salt and Pepper (to taste).
  • Place Fresh Ginger (1/2 inch) over the fish.
  • Fold the parchment paper up over the bottom part of the fish, then fold it down to cover the top half of the fish. Roll and fold the left and right sides of the parchment paper down towards the fish, then tuck the parchment paper under each side of the fish.
  • Place the wrapped fish on a baking sheet, then place the baking sheet in the oven.
  • Take the fish out of the oven after 10 minutes, then test the doneness of the fish by flaking it with a fork. If it flakes easily, the fish is cooked; if the fish still looks translucent and resists flaking, place it back in the oven to heat it until it’s done.
  • While waiting for the fish to cook, prepare the sauce by combining Water (1 tablespoon), Soy Sauce (1 tablespoon), Shaoxing Cooking Wine (1 teaspoon), Sesame Oil (1 teaspoon), Granulated Sugar (1/2 teaspoon) and Ground White Pepper (1 dash).
  • As soon as the fish is done, tear the parchment paper horizontally across the fish, then pour the sauce all over the fish.
  • Garnish with Fresh Cilantro Leaf (1/4 cup), Scallion (1 stalk), and Red Chili Pepper (to taste). Serve immediately.
