2 pounds beef stew meat, cut across the grain into 1/4x1/2-inch strips
2 teaspoons salt
2 teaspoons ground black pepper
1 teaspoon Spanish paprika
¼ cup butter
1?½ onions, minced
1?½ pounds sliced fresh mushrooms
1 (10.5 ounce) can condensed beef broth, divided
? cup dry white wine
6 cloves garlic, minced
3 tablespoons ketchup
salt and ground black pepper to taste
1 (16 ounce) package broad egg noodles
3 tablespoons all-purpose flour
1 cup sour cream
1 pinch paprika, for garnish

Steps:

  • Season beef with salt, pepper, and Spanish paprika.
  • Melt butter in a large skillet over medium heat. Saute onions and mushrooms in melted butter until onions are tender, 5 to 7 minutes; transfer to a bowl, retaining some of the butter in the skillet.
  • Cook and stir beef in retained butter until lightly browned, 5 to 7 minutes.
  • Stir 2/3 cup beef broth, white wine, garlic, and ketchup into the beef mixture; season with salt and pepper. Place a cover on the skillet and cook mixture at a simmer for 15 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes; drain.
  • Whisk remaining beef broth and flour together in a bowl; add to beef mixture. Bring the mixture to a boil, stirring continually, and boil for 1 minute. Reduce heat to low, add sour cream, and stir until smoothly incorporated. Ladle over egg noodles and garnish with paprika.

Beef Stroganoff - That's Some Good Cookin' image

Rich, creamy and full of flavor, this beef stroganoff is easy enough for every day dining and elegant enough for company.

Number Of Ingredients 12

1-1½ pounds beef (please see Notes!)
Salt and pepper, to taste (to taste)
2 tablespoons vegetable oil
2 tablespoons butter
1 medium onion, sliced into quarter rings
½ pound 8 ounces mushrooms, sliced ¼-inch thick (I use cremini, but white mushrooms are fine, too.)
2 cloves fresh garlic, minced
3 tablespoons flour
1 ½ cups beef broth or stock
1 cup sour cream or crème fraiche
Chopped fresh parsley for garnish, optional
1 12 ounce bag wide egg noodles, cooked according to package directions

Steps:

  • Slice beef into 1/8 - 1/4 inch thick strips. (See Notes) Cut the strips about 2-inches long. Sprinkle with salt and pepper.
  • Heat a frying pan over medium high heat. Add 1 tablespoon cooking oil. Stir-fry half of the beef strips for two minutes. Remove cooked beef to a plate or platter and repeat cooking process with remaining beef strips. Set cooked beef aside on plate or platter.
  • Add butter to the same pan in which the beef was cooked. There is no need to clean the pan prior to adding the butter. Add the onion and mushrooms; sauté over medium heat until nicely browned. Add the garlic and cook an additional 1 minute, stirring constantly.
  • Return beef to pan with vegetables. Sprinkle with flour and stir to incorporate. Add broth or stock and stir well. Cook, stirring frequently, over medium heat until bubbly and thickened. Turn off heat and remove pan.
  • Stir in the sour cream or crème fraiche. Serve over cooked wide egg noodles. Garnish with chopped fresh parsley, if desired.

This recipe is from the magazine Fine Cooking. It's by far the best beef stroganoff I've ever tasted. It wasn't difficult at all, and didn't take much time. I made it after work one evening. The ingredients were readily available in my grocery store, and well worth the investment. The porcini mushrooms really add a great flavor and deeper color to the beef broth. I'd be proud to serve this dish to company. Note: I recommend you prep all remaining ingredients while the dried porcini is steeping. The rest of the steps are very quick, and don't allow time for prepping as you go. Second note: I buy whole beef tenderloins at Costco for a very reasonable price. I remove the silver skin myself with a sharp meat carving knife. I get a fabulous roast, quite a few filet mignon steaks, and the funny shaped thinner "tail" part (about a pound) is perfect for this recipe, although you could use any part of the tenderloin.

I don't see how any stroganoff made in 20 minutes would be good, honestly. I cook mine for 1-2 hours. I use short ribs and shake em up in a bag with flour and smoked paprika. Sear short ribs in a bit of oil, take em out, cook onions with herbs and whatever you want, add garlic, deglaze with wine.
