Caldereta (or kaldereta) is an elegant Filipino beef stew that is prepared mostly on special occasions.

2?¼ pounds beef stew meat, cut into 1 1/2-inch chunks
2 cups water
2 beef bouillon cubes
3 tablespoons olive oil, divided
1 onion, chopped
2 cloves garlic, minced
1 teaspoon paprika
salt and ground black pepper to taste
3 tomatoes, diced
2 potatoes, quartered
2 carrots, cut in chunks
¾ (6 ounce) package frozen peas
1 red bell pepper, cut into chunks
1 (3 ounce) can liver spread
1 tablespoon vinegar, or to taste
1 teaspoon white sugar

Steps:

  • Combine beef stew meat, water, and beef bouillon in a pot; bring to a boil. Boil until tender, 45 to 60 minutes.
  • Heat olive oil in a large pot over medium-high heat. Saute onion and garlic until onion is translucent, about 5 minutes. Add paprika, salt, and pepper. Add tomatoes; bring to a boil and cook until tender, about 5 minutes. Add the boiled beef and all but 1/2 cup of the broth.
  • Heat remaining olive oil in a skillet over medium-high heat. Add potatoes; cook and stir until browned, 5 to 7 minutes. Add to the beef mixture. Add carrots, peas, and red bell pepper. Saute until vegetables are tender, about 5 minutes.
  • Mix liver spread, vinegar, sugar, and reserved beef broth together in a bowl. Pour mixture into the pot with the beef; add the sauteed vegetables. Mix and continue cooking until flavors combine, about 5 minutes more.

This yummy Beef Stew Recipe Filipino style is a comforting slow-cooked dish filled with meat and nutritious veggies. Every bit of this beef stew is full of excellent flavor, and the beef is so tender, it melts in your mouth.

1/2 kilo beef (cut into small cubes)
1 can chicken sausage (cut in to small slices)
1 1/2 cups chopped celery ribs
3 medium potatoes (cubed)
1 1/2 teaspoons paprika
1/4 teaspoon McCormick ground cloves
2 pieces bay leaves (dried or fresh)
3 medium carrots (chopped)
2 medium red bell pepper (chopped)
260 g frozen green peas
1 tablespoon cornstarch diluted in 2 tbsp water
1 teaspoon garlic (minced)
1 medium onion (chopped)
2 cups beef broth
1/2 teaspoon ground black pepper
2 teaspoon salt
2 tbsp Canola cooking oil

Steps:

  • In a large fry pan, brown the beef over a high heat for a couple of minutes.
  • Add onion, garlic, bay leaves, ground cloves, and paprika. Stir and cook for another 2 minutes.
  • Pour-in beef broth and let it boil.
  • Simmer for more than 1 hour or  until beef becomes tender. Add water as needed.
  • Add carrots, potatoes, green peas, celery ribs, salt, and pepper. Stir and cook for 8 to 10 minutes.
  • Add red bell pepper, and pour-in diluted cornstarch then mix well and cook for another minute.
  • Taste and adjust seasoning, then remove from the heat and place to a serving bowl.
