4 (8-inch) fat-free flour tortillas
Cooking spray
1 cup chopped cooked chicken
1/2 cup thin red bell pepper strips
1/4 cup thin green bell pepper strips
1/2 cup shredded reduced-fat sharp Cheddar cheese (2 oz)
1 tablespoon sliced green onion (1 medium)
1/2 cup Old El Paso™ Thick 'n Chunky salsa

Steps:

Heat oven to 450°F. Line 15x10x1-inch pan with foil. Spray both sides of each tortilla lightly with cooking spray. Place 2 tortillas on foil-lined pan. Sprinkle each with half of the chicken, bell pepper strips, cheese and green onion. Top with remaining 2 tortillas.
Bake 3 to 5 minutes or until light brown and crisp. Cut into wedges; serve with salsa.

Ingredients

Quesadillas
6 (8-inch) burrito-style flour tortillas
3 tablespoons Land O Lakes® Butter melted
18 (3/4-ounce) slices Land O Lakes® Deli American cut in half
3 cups cubed cooked chicken
1 (15-ounce) can black beans, drained, rinsed
1 (14.5-ounce) can diced tomatoes with chiles, drained
Toppings
Salsa, if desired
Shredded Cheddar cheese, if desired
Sour cream, if desired

Steps:

Brush 1 side of each tortilla with butter. Place tortillas onto cutting board, buttered-side down.
Place 3 pieces cheese over half of each tortilla. Layer with 1/2 cup chicken, 1/4 cup black beans and 3 tablespoons tomatoes. Top each with 3 pieces cheese. Fold other half of tortilla over filling.
Heat 12-inch skillet or griddle over medium heat. Cook each quesadilla, turning once, 3-4 minutes or until lightly browned.
Cut each into 3 wedges. Serve with toppings as desired.

I made a triple batch of the salsa and a double batch of the quesadillas, as the recipe is more of a snack or lunch size serving. The salsa was good on the quesadillas, but I think it could use some additional seasoning. I'll likely play around with it and update it here if I like the results.
