2 cups biscuit/baking mix
1-1/4 cups milk
1 egg, beaten
2 tablespoons sugar
2 tablespoons lemon juice
1 teaspoon vanilla extract
Red, green, yellow and blue liquid or paste food coloring
Maple syrup, optional

Steps:

  • In a bowl, combine the biscuit mix, milk, egg, sugar, lemon juice and vanilla; mix until smooth. Place 1 tablespoon of batter each in four bowls. Color one red, one green, one yellow and one blue. Drop remaining batter by 1/4 cupfuls onto a lightly greased hot griddle. , To create face, paint colored batter on pancakes with a new small paintbrush. Cook until bubbles form on the top. Turn and cook until second side is golden. Serve with syrup if desired.

1 cup Buttermilk Pancake Mix (see www.bhg.com)
1 cup milk
1 egg, slightly beaten
1 tablespoon cooking oil
Banana slices
Canned peach slices
Raisins
Shredded coconut

Steps:

  • In a medium mixing bowl combine Buttermilk Pancake Mix, milk, egg, and oil. Stir just until combined but still slightly lumpy.
  • Heat a lightly greased griddle or heavy skillet over medium heat until a few drops of water dance across the surface. For each pancake, pour about 1/4 cup batter onto the hot griddle. Spread batter into a circle about 4 inches in diameter.
  • Cook over medium heat until pancakes are golden brown, turning to cook second sides when pancake surfaces are bubbly and edges are slightly dry (about 2 to 3 minutes per side).
  • Let youngsters make their own funny faces on the cooked pancakes, using their imaginations and bananas for eyes, peaches for eyebrows and mouths, raisins for noses and mouths, and coconut for whiskers. Serve warm. Makes 16 pancakes.
