8 Yukon gold potatoes, scrubbed and quartered
1 green pepper, diced
1 yellow pepper, diced
2 T. butter, cut into small cubes
2 t. olive oil
1 t. oregano
1 t. basil
½ t. black pepper

Steps:

2 cups uncooked penne pasta
1 pound smoked sausage, cut into 1/4-inch slices
1-1/2 cups 2% milk
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1-1/2 cups cheddar french-fried onions, divided
1 cup shredded part-skim mozzarella cheese, divided
1 cup frozen peas

Steps:

Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house.
