- Heat the oil in a deep pan and gently fry the onion and garlic for about 5 mins until soft. Add the curry paste and stir-fry for 1-2 mins, then tip in the tomatoes and stock.
- Bring to a simmer, then add the fish. Gently cook for 4-5 mins until the fish flakes easily. Serve immediately with rice or naan

- In a wok or dutch oven, heat oil over medium heat, cook onion and garlic for 5 minutes or until soft.
- Add curry powder, salt and pepper and stir for 1 minute.
- Add coconut milk, tomatoes, stock and allspice, bring to boil.
- Reduce heat and simmer for 20 minutes.
- Add fish, cover and cook for 10 minutes or until fish flakes easily with fork.
- Discard the allspice, stir in lime juice and serve sprinkled with the spring onions.

- To Cook Heat the oil in a fry pan and fry the fish fillets on each side until golden and just cooked through (about 3 mins each side) Drain on paper towels and set aside. Heat 1 tbsp of oil in a clean pan and fry the curry paste in it until fragrant. Add the coconut milk and season with the fish sauce, sugar, sliced chilli and kaffir lime leaf shreds. Simmer for a few minutes to concentrate flavours. Place the fish fillets on a serving dish and coat them with the red curry sauce. Garnish with the remaining kaffir lime leaf and red chilli shreds.
