These easy, healthy turkey burgers are perfect for feeding the whole family, kids included. Our tasty burgers are great for summer entertaining

Yield Makes 8 burgers

Number Of Ingredients 9

2 tbsp olive oil
1 large onion, finely chopped
2 garlic cloves, crushed
85g porridge oats
450g/1lb minced turkey
100g dried apricot, finely chopped
1 large carrot, grated
1 egg, beaten
cucumber slices, to serve

Steps:

  • Heat 1 tbsp oil in a pan and gently fry the onion for 5 mins until soft. Add the garlic and cook for 1 min. Add the oats and fry for 2 mins more. Tip into a bowl and set aside to cool.
  • Add the rest of the ingredients to the cooled mixture and mix well with your hands. Season to taste and shape into 8 patties.
  • Heat oven to 200C/fan 180C/gas 6. Heat the remaining olive oil in a large, non-stick frying pan and sear the burgers on each side until well coloured (3-4 mins). Transfer to a baking sheet and cook in the oven for 10-15 mins. Serve in rolls with Tangy tomato chutney (see 'goes well with') and cucumber slices.
  • For the chutney heat 1 tbsp of olive oil in a pan and add 1 finely chopped onion. Cook for 5 mins until softened. Stir in 1 crushed garlic clove and cook for a further min. Add 1 tbsp sundried tomato paste, a 400g can good-quality chopped tomatoes and a pinch of sugar. Gently cook for 20-25 mins until rich and thick. Season to taste, then leave to cool before serving.

These extra easy black bean burgers taste amazing and come together in minutes! These are dairy, egg, and gluten-free and will make both the meat eaters and non-meat eaters in your life happy! You can make these by hand or with a food processor. Both methods work well, but for the most consistent interior texture, use a food processor.

Yield Makes 2 large (7 ounce) or 4 small (3.5 ounce) burgers

Number Of Ingredients 11

1 (15-ounce) can black beans, drained and rinsed or use 1 1/2 cups cooked black beans
2 medium cloves garlic
2 scallions, ends trimmed and roughly chopped
1/4 cup (30 grams) walnuts
1/2 cup (50 grams) old fashioned rolled oats
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1 tablespoon light soy sauce or tamari
1 tablespoon red wine vinegar
1 teaspoon maple syrup
1 tablespoon oil for cooking

Steps:

  • Add the garlic to the bowl of a food processor and pulse until finely minced. Add the scallions, and then pulse until chopped small. Scrape down the sides, and then add the oats, walnuts, chili powder, smoked paprika, tamari, red wine vinegar, and maple syrup. Process into a fine texture that looks like breadcrumbs.
  • Measure about 1/2 cup of the black beans and set it aside. Add the remaining black beans to the food processor. Pulse until mostly smooth with some texture. See our video for reference.
  • Scrape the mixture into a bowl and fold in the reserved 1/2 cup of beans. Set the mixture aside for 5 minutes so that the oats have a chance to absorb any excess moisture in the mixture.
  • Mince the garlic and scallions, and then finely chop the walnuts.
  • In the bottom of a wide bowl, mash the black beans with a fork. Stir in the oats, chopped walnuts, garlic, scallions, spices, tamari, vinegar, and maple syrup. If the mixture does not hold together, mash the beans a little bit more. Set the mixture aside for 5 minutes so that the oats have a chance to absorb any excess moisture in the mixture.
  • When you are ready to make the burgers, divide into 2 equal portions for 7-ounce patties or 4 equal portions for 3.5-ounce patties. Form each portion into a round patty, firmly molding and pressing the mixture together so that it does not fall apart.
  • Heat a skillet over medium-low heat, add oil, and then place patties in one layer. (We use about 1 tablespoon of oil to cook 4 burgers). Cook until heated through, firm and browned on both sides, about 4 to 6 minutes on each side. If any bits fall from the sides as you flip, press them back into the sides of the patty. Be careful when flipping so they stay together.
  • To bake the patties, drizzle or spray with olive oil, and then bake on a baking sheet in a 350 degree Fahrenheit oven for 10 minutes on each side (or until heated through). For an outdoor grill, we recommend placing a cast iron pan or griddle over a low fire to cook the burgers.

    3. Blitz your crackers or bread (remove the crusts first) in a food processor until you get a fine consistency. Oil a clean baking tray and put aside.
    4. Put the cooled onions into a large bowl with the rest of the burger ingredients. Use clean hands to scrunch the mixture together really well, then divide into 6 equal balls for burgers and 18 equal balls for sliders.
    5. Wet your hands and roll the balls into burger-shaped patties about 2cm thick. Place your burgers or sliders on the oiled baking tray and pat with a little olive oil. Cover them with clingfilm and put the tray into the fridge for at least an hour, or until the patties firm up.
    6. This is a good time to make your spicy mayo, so put mayo, yoghurt, ketchup and smoked paprika into a bowl, squeeze in the lemon juice, mix well and put to one side.

    9. When the burgers are cooked to your liking and it’s all looking really good, halve your burger buns and warm them through. Put the bacon on a plate lined with kitchen paper to drain.
    10. Click off the lettuce leaves, wash and spin dry. Slice the tomatoes and gherkins.
    11. When everything comes together, pop your burgers or sliders on to their buns, add all your lovely toppings and your spicy mayo (you know how to put a burger together!), then tuck in with a lovely fresh salad, baked potato or potato wedges.
