Gooey Butter Cookies {With Cake Mix} - CakeWhiz image

Quick and easy gooey butter cookies recipe, homemade with simple ingredients. Starts off with yellow cake mix. Soft and chewy with a rich butter flavor.

Number Of Ingredients 6

1/2 cup Butter (Unsalted, Room temperature)
1 Egg (Large)
8 oz. Cream cheese (Full fat, Softened)
1 tsp Vanilla extract
1 box Yellow cake mix
1-2 cups Powdered sugar (For rolling cookie dough balls)

Steps:

  • In a large mixing bowl, add butter, egg, cream cheese, vanilla extract and mix until smooth. 
  • Add cake mix and mix until combined. 
  • Cover bowl and chill in the fridge for at least 30 minutes to make the dough easier to handle. 
  • Scoop out small portions of the dough and make little balls.
  • Roll these cookie balls in a bowl of powdered sugar until fully coated. 
  • Place them on a cookie tray, lined with parchment paper.
  • Bake at 350 degrees F for 10-12 minutes or until edges are firm but the centers are slightly soft (should not be jiggly though!)
  • Optional: Sift more powdered sugar on top of the cookies, prior to serving. 
  • Enjoy!
