I created this chicken sandwich recipe based on a meal my daughter ordered at a restaurant. She likes to dip her sandwich in the extra honey-mustard sauce. —Marilyn Moberg, Papillion, Nebraska

1/4 cup reduced-fat mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
4 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon Montreal steak seasoning
4 slices Swiss cheese
4 whole wheat hamburger buns, split
2 bacon strips, cooked and crumbled
Lettuce leaves and tomato slices, optional

Steps:

  • In a small bowl, mix mayonnaise, mustard and honey. Pound chicken with a meat mallet to 1/2-in. thickness. Sprinkle chicken with steak seasoning. Grill chicken, covered, over medium heat or broil 4 in. from heat until a thermometer reads 165°, 4-6 minutes on each side Top with cheese during the last 1 minute of cooking., Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. Serve chicken on buns with bacon, mayonnaise mixture and, if desired, lettuce and tomato.

Try this lighter version of Buffalo chicken sandwiches. We coated the meat in a mix of spices to give it the same kick as the original, then grilled instead of fried it.

Number Of Ingredients 12

1?½ pounds (about 2) boned, skinned chicken breast halves, halved crosswise and pounded until 1/2 in. thick
1?½ tablespoons vegetable oil
1 teaspoon kosher salt
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon cayenne
½ teaspoon pepper
4 focaccia or ciabatta rolls, split
¼ cup mayonnaise
3 tablespoons crumbled blue cheese
4 leaves butter lettuce
4 slices heirloom tomato

Steps:

  • Heat grill to medium (350° to 450°). In a medium bowl, coat chicken with oil, salt, and spices. Grill chicken, turning once, until no longer pink in center, about 6 minutes total. Grill roll halves just until toasted and grill marks appear, about 1 minute.
  • Mix mayonnaise and blue cheese and spread 1 heaping tbsp. on cut sides of each roll. Assemble sandwiches with chicken, lettuce, and tomato.

  • For the marinade, use a mortar and pestle to pound the garlic, coriander and peppercorns to a smooth paste. Add the paste to the chicken along with the 1 tablespoon of fish sauce. Mix until well combined. Set aside to marinate for at least 10 minutes or a couple of hours. To make the dressing for the som tum coleslaw, use a mortar and pestle to pound the garlic and chillies to a paste. Then add the peanuts and continuing pounding to form a rough paste. Now stir through the sugar, fish sauce and lime juice. Set the dressing aside until ready to serve. Heat a barbecue grill plate or non-stick frying pan over high heat. Brush the surface with the vegetable oil. Add the chicken pieces skin side down. Sear for 2 minutes or until a deep colour develops. Flip the chicken and sear the second side for another 2 minutes. Then turn the heat down to low and cook the chicken, turning every so often, for 6-8 minutes or until cooked through. Transfer the chicken to a plate to rest. Use a paper towel to lightly wipe the grill plate or frying pan, being sure to leave some of the chicken fat. Toast the bread buttered side down for 2-3 minutes or until golden. To assemble, mix the som tum coleslaw dressing with the cabbage. Spread the mayonnaise on the toasted bread halves. Top with lettuce, tomato and chicken. Sprinkle the chicken with coriander. Top with the som tum coleslaw. Then top with bread. Serve with napkins!
