2 (6-inch) sub rolls
2 tablespoons soft butter
2 tablespoons mustard
4 slices boiled or smoked ham
6 slices manchego cheese
4 slices pickle
Special equipment: an indoor grill or a sandwich press

Steps:

  • Preheat a stovetop grill or sandwich press.
  • Slice the sub rolls end to end. Spread the butter evenly on both rolls. Repeat the process with mustard. Lay the ham, cheese, and pickle slices evenly in the roll. Put the sandwiches in a press or on the grill and cook for about 6 minutes, or until warm through or toasted on the outside.

2 soft Portuguese rolls or soft French sandwich rolls, sliced lengthwise
Prepared mustard, to taste
1 large dill pickle, thinly sliced lengthwise
4 ounces roast turkey, sliced
4 ounces ham, thinly sliced
3 ounces sliced Swiss or provolone cheese
Butter, softened

Steps:

  • Spread each roll with mustard. Arrange half of pickle, turkey, ham, and cheese slices on each roll; press together gently. Spread outsides of rolls with butter.
  • Place sandwiches in cast-iron skillet over medium-high heat. Put second skillet directly on sandwiches. Press down, and grill 5 to 10 minutes on each side or until cheese is melted and sandwich is flattened and browned.

A Cuban press consists of dill pickles, thinly sliced roast pork, thinly sliced sweet ham, and Swiss cheese, layered in that order on a sliced loaf of Cuban bread, which is crusty on the outside and soft inside. Unlike the submarine sandwich, a press contains no lettuce, tomatoes, onions, mayonnaise, or bell peppers. Butter and mustard are optional. The origin of the Cuban sandwich is vague, but it was popular with workers in the Cuban sugar mills and cigar factories in the 1800s. Cubans immigrated to the Keys in large numbers after the Cuban Revolution in 1868, when Vicente Martinez Ybor moved his cigar-making factory from Havana to Key West.   • Make the roast pork: Mix all ingredients except for pork loin in a large resealable plastic bag until fully combined. Add pork and seal bag. Massage bag to coat pork with marinade. Marinate in the refrigerator for at least 2 hours and up to overnight. Massage bag from time to time to distribute marinade. Remove bag from refrigerator and let sit at room temperature for 1 hour more. Preheat oven to 400º. Place pork in a dutch oven with a lid and discard excess marinade. Cook covered for 30 minutes, then uncover and carefully flip loin. Continue to cook, uncovered, until internal temperature reaches 145º, 20 to 30 minutes more. Transfer pork to a cutting board, loosely cover with foil, and let rest for 10 to 15 minutes before slicing. Make the sandwiches: Cut 6 large pieces of foil. Split bread in half lengthwise and butter the outside of both slices, then place on foil.  Assemble sandwiches on foil. Spread a thin layer of mustard on the inside of each slice of bread. Add layers of ham, roast pork slices, pickles, and Swiss, then add top of bread. Wrap sandwich (or sandwiches) tightly in foil and place in a grill pan over medium-high heat or panini press. Cook 2 to 3 minutes per side. If using a grill pan, place a weight (such as a cast iron skillet) on top of sandwich to press it. Remove sandwich from grill, and remove foil. Cut sandwich diagonally in half.  Serve with additional pickles and potato chips.
