CUBAN SUGAR COOKIES | JUST A PINCH RECIPES
This is my husband's family traditional holiday recipe. They are referred to as "sand cookies". They have a wonderful soft texture and make the perfect holiday cookie gift. Easy enough for children to help with too.

Steps:
- Combine all ingredients in a standing mixer (or hand mixer) and mix until combined well. Do not overmix. Form into log, wrap in plastic and chill at least 1 hour. Preheat oven to 350 degrees Cut cookie log into ½ inch slices and place on parchment lined baking sheet about 3 inches apart. Sprinkle each cookie top with a little sugar. Bake at 350 degrees for 20-25 minutes. Do not brown or overbake.

Steps:
- Preheat the oven to 350 °F.
- In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and sugar until they are just combined. Add the vanilla and almond extracts. In a medium bowl, sift together the flour and salt, then add them to the butter/sugar mixture. Mix on low speed until the dough starts to come together. Turn the dough out onto a lightly floured surface and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
- Roll the dough 1/2-inch thick and cut into 3-inch circles with a cookie cutter (or a glass lightly coated in flour - shaking off any excess). Place the cookies on an ungreased baking sheet.
- Bake for 20 to 25 minutes, until the edges just begin to brown. Allow to cool to room temperature and serve.

Preheat the oven to 350 F. With a sharp knife, cut the dough into 1/4-inch slices and place them on a non-stick or a lightly buttered regular cookie sheet. With your finger, make a small depression in the centre of each cookie, and bake until lightly browned, 20 to 25 minutes. Store in a tightly covered tin. The cookies will keep for one week.
