This sauce is quick and easy to make. It makes a delicious sauce that would dress up any fish dish. I like this with poached salmon.

1/2 cup white wine
1 shallot, minced
1 cup butter, cut into pieces
1/2 cup whipping cream
1 lemon, juice of

Steps:

  • In small saucepan, heat wine and shallot. Bring to a boil and reduce over medium-high heat until only 2 tablespoons of liquid remain.
  • Reduce heat to low and whisk in butter, a few pieces at a time, until sauce is smooth and all the butter is incorporated.
  • Whisk in cream and lemon juice. Keep warm in the top of a double boiler set over hot water until serving time.

1 tablespoon flour
2 tablespoons Tbsp. KRAFT Lite House Italian Dressing
¼ cup fat-free reduced-sodium chicken broth
1 tablespoon lemon juice
1 ounce oz. PHILADELPHIA Fat Free Cream Cheese, cubed
1 tablespoon chopped fresh parsley

Steps:

  • COAT fish with flour.
  • HEAT dressing in medium skillet on medium heat. Add fish; cook 4 to 5 min. on each side or until fish flakes easily with fork. Remove from skillet; cover to keep warm.
  • ADD broth and lemon juice to skillet; cook 3 min. or until reduced by half, stirring frequently with whisk. Add cream cheese; cook 1 min. or until melted, stirring constantly. Pour over fish. Sprinkle with parsley.
