The success of this frosting is in the technique, not the ingredients. It's so creamy and not too sweet.

Yield 2 layer cake

Number Of Ingredients 3

2 cups butter, softened
1 cup heavy whipping cream
1 cup confectioners' sugar

Steps:

  • In a large bowl, Whip the butter on high speed, occasionally scraping down the sides of the bowl. Whip until double in volume. This takes a very long time, approximately 10 minutes.
  • While still whipping, drizzle in the heavy cream. Continue whipping until the mixture is stiff, approximately 2 to 4 minutes.
  • Add 1/2 of the confectioners sugar and whip until smooth. At this point, you can taste the frosting and determine if you would like to add more sugar to sweeten to taste.
  • Thickly frosts top and sides of two 9 inch cakes.

I've been using this chocolate frosting recipe forever, and several friends now use it as their "favorite frosting!" It's smooth, creamy and not-too-dark. I just wanted to share it with chocolate lovers everywhere! It will frost, but not fill, an 8- or 9-inch layer cake.

Yield 1 frosting for 1 cake

Number Of Ingredients 5

2?¾ cups confectioners' sugar
6 tablespoons unsweetened cocoa powder
6 tablespoons butter
5 tablespoons evaporated milk
1 teaspoon vanilla extract

Steps:

  • In a medium bowl, sift together the confectioners' sugar and cocoa, and set aside.
  • In a large bowl, cream butter until smooth, then gradually beat in sugar mixture alternately with evaporated milk. Blend in vanilla. Beat until light and fluffy. If necessary, adjust consistency with more milk or sugar.
