The classic quesadilla gets kicked up a notch with a creamy, béchamel-like sauce. A saucy base helps the cheese go further and keeps the chicken from drying out. If any dish called for a dash of your favorite hot sauce, this would be it: Just a little cuts through the creamy filling and packs the right amount of heat. For golden, crisp tortillas, coat both sides of the uncooked quesadillas with cooking spray instead of coating the pan. Serve the quesadillas with black beans and Spanish-style rice. You could also try a heartier green like kale or chard; wilt these first before adding to the chicken mixture.

Number Of Ingredients 12

1 tablespoon olive oil
4 teaspoons all-purpose flour
1/2 cup unsalted chicken stock
1 cup coarsely chopped spinach (about 1 1/2 oz.)
1 tablespoon hot sauce (such as Cholula)
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
6 ounces skinless, boneless rotisserie chicken breast, shredded (about 1 1/4 cups)
4 ounces preshredded mozzarella cheese (about 1 cup)
4 (8-in.) whole-wheat flour tortillas
Cooking spray
1 ripe avocado, quartered

Steps:

  • Heat oil in a small saucepan over medium. Sprinkle flour over pan; cook 30 seconds, stirring constantly. Slowly add stock; cook 2 minutes or until thickened, stirring frequently. Remove pan from heat; stir in spinach, hot sauce, salt, pepper, chicken, and cheese. Heat a large skillet over medium. Divide chicken mixture evenly over half of each tortilla. Fold tortillas in half over filling. Carefully coat both sides of quesadillas with cooking spray. Add 2 quesadillas to pan; cook 2 minutes on each side or until browned and cheese is melted. Repeat with remaining quesadillas. Cut each into 4 wedges. Serve with avocado.

50g watercress
½ small bunch of chives
½ lemon , zested
5 tbsp garlic soft cheese
2 roasted chicken breasts, skin removed and reserved
2 large flour tortillas
30g mature cheddar , grated
30g mozzarella , grated

Steps:

  • Blitz the watercress, chives, lemon zest and soft cheese together and season. Fry the reserved chicken skin for 5 mins until crisp, then set aside. Meanwhile, shred the roasted chicken.
  • Spread the cheese mix over 1 tortilla, top with the chicken, crispy chicken skin, the cheddar, mozzarella and second tortilla. Heat a frying pan over a medium heat, add the quesadilla and cook for 2-3 mins on each side. Cut into four.

This is a Gatorbek original - I don't know if I've ever seen a quesadilla recipe that uses cottage cheese, but my whole family loves this one! Just watch how much you spoon in to the tortillas, because you don't want it running out the sides if you can help it.
