2 (3 ounce) packages cream cheese, softened
2 tablespoons cream or 2 tablespoons milk
4 cups confectioners' sugar
4 ounces unsweetened chocolate squares, melted
1 teaspoon vanilla extract
1 teaspoon rum or 1/2 teaspoon almond extract
1 dash salt
1 1/2 cups chopped pecans (optional)

Steps:

  • Beat cream cheese with cream.
  • Gradually beat in sugar, then blend in chocolate.
  • Stir in vanilla and rum or almond extract and 1 cup nuts.
  • Press into lightly greased 8-inch square pan and cover top with remaining nuts.
  • Mark in 64 1-inch square pieces and chill.

Number Of Ingredients 8

3 cups white sugar
⅔ cup heavy cream
¾ cup butter
1 (7 ounce) jar marshmallow creme
1 (11 ounce) package white chocolate chips
3 teaspoons orange extract
12 drops yellow food coloring
9 drops red food coloring

Steps:

  • Grease a 9 x 13 inch pan.
  • In a medium saucepan over medium heat, combine sugar, cream and butter. Heat to soft ball stage, 234 degrees F (112 degrees C). Remove from heat and stir in marshmallow creme and white chocolate chips; mix well until the chips melt. Reserve 1 cup of mixture and set aside.
  • To the remaining mixture add orange flavoring, yellow and red food coloring. Stir well and pour into prepared pan. Pour reserved cream mixture on top. Using a knife, swirl layers for decorative effect.
  • Chill for 2 hours, or until firm, and cut into squares.

Cook and stir over low heat until mixture reaches at least 160° and coats the back of a metal spoon. , Remove from the heat. Whisk in cream cheese until smooth. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Stir in lemon juice and vanilla. Press plastic wrap onto surface of custard. Refrigerate for several hours or overnight., Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer’s directions. Refrigerate remaining mixture until ready to freeze. Transfer to a freezer container; freeze for 2-4 hours before serving.
