I discovered this tasty St. Patrick's day treat when I attended an Irish Rovers Concert. My family and friend insist that it is a staple at get togethers any time of the year. Roast this Corned Beef slowly at a low setting for a melt in your mouth delight. The aroma is fantastic!

- Preheat oven to 300 degrees F (150 degrees C). Rinse the beef completely and pat dry.
- Place the brisket on rack in a roasting pan or Dutch oven. Rub the brown sugar on the corned beef to coat entire beef, including the bottom. Pour the bottle of stout beer around, and gently over the beef to wet the sugar.
- Cover, and place in preheated oven. Bake for 2 1/2 hours. Allow to rest 5 minutes before slicing.

The easiest and most tender corned beef. This recipe is for all of you that have that pressure cooker tucked away someplace. It makes the most tender corned beef brisket, in just over an hour. Cooking with the water tends to cut the salt down some also. Once you make it this way, you'll never go back to oven cooking. Just remember the key to a good brisket, is always cutting against the grain. The point cut may have two or more grains, so cut carefully.

Steps:
- Place corn beef in pressure cooker. If, too large, cut in half. Add season packet, that comes with meat, along with bay leaf, garlic and pickling spices if using. Add water, so just even with top of meat.
- Turn burner on, and bring to a boil, put cover and rocker on, and cook until rocker starts rocking. Keep at medium to low rocking motion, and cook for 1 hour. Turn off burner. Allow pressure to escape on it's own. Carefully open pot and remove meat to serving platter. Let rest 5 minutes, and slice in thin slices, against the grain with electric knife.

CORNED BEEF – RECTEQ
- Pre-heat recteq to 250ºF. If your meat is already cured, submerge it in cold water for about 6 hours changing the water once; if you cured your meat yourself, rinse in cold water for about 1-2 minutes then remove meat from water and pat dry. Season brisket liberally with Ben’s Heffer Dust. Place brisket in recteq fat-side down and smoke until meat reaches an internal temperature of 165ºF. Remove from grill and place in aluminum pan. Add beef broth, beer, carrots, and onions and season liberally with Greek rub. Cover pan with foil, making sure liquid covers at least 1/3 of the meat. Increase the grill temperature to 300? and return to grill to cook for 1.5 hours. Remove pan and add potatoes and cabbage. Cover pan and return to grill and cook until meat reaches an internal temperature between 195-200ºF (your meat probe should slide freely in and out of the brisket and vegetables should be fork tender). Remove meat from pan and double wrap in aluminum foil or butcher paper, then let meat rest 30 minutes. Remove from wrap and slice thin against the grain.
