2 teaspoons reduced-sodium soy sauce
2 teaspoons dry sherry
2 teaspoons toasted Asian-style sesame oil
10 ounces skinless, boneless chicken breast halves, cut into 1/2-inch pieces
1 tablespoon reduced-sodium soy sauce
3 tablespoons water
2 tablespoons rice vinegar
1 tablespoon granulated sugar or granulated sugar substitute or brown sugar substitute (see Tip) equivalent to 1 Tablespoon granulated sugar
1 teaspoon cornstarch
2 teaspoons canola oil, plus
2 teaspoons canola oil
4 dried red chili peppers, seeded and broken into small pieces (see Tip)
4 green onions cut into 1-inch pieces
2 cups coarsely chopped bok choy
2 teaspoons grated fresh ginger
1?? cups hot cooked brown rice
¼ cup chopped unsalted dry roasted peanuts

Steps:

  • In a medium bowl, stir together 2 teaspoons soy sauce, sherry, and sesame oil; add chicken pieces and toss to coat. Marinate at room temperature for 20 minutes. Meanwhile, for sauce, stir together 1 tablespoon soy sauce, water, rice vinegar, sugar, and cornstarch in a small bowl; set aside.
  • In a large skillet, heat 2 teaspoons of canola oil over medium-high heat. Add marinated chicken; stir-fry until nearly cooked through, about 5 minutes. Remove chicken. Add the remaining 2 teaspoons oil to skillet. Add chili peppers and green onions; stir-fry for 1 minute. Add bok choy and ginger; stir-fry for 1 minute more. Add the sauce; cook until bubbly. Return chicken to skillet and stir to combine. Serve with hot cooked brown rice. Sprinkle with peanuts.

Quick Asian stir-fries make especially satisfying weeknight dinners. Kung pao is traditionally a seriously spicy dish, but we've given ours a moderate level of heat; feel free to adjust the quantity of red-pepper flakes to suit your taste. Serve with steamed rice.

1?? pounds boneless, skinless chicken breasts (about 4), cut into 1/2-inch pieces
5 tablespoons soy sauce
2 tablespoons sherry
1 tablespoon plus 2 teaspoons cornstarch
2 teaspoons sugar
2 tablespoons white-wine vinegar or rice vinegar
2 teaspoons Asian sesame oil
? cup water
2 tablespoons cooking oil
½ cup peanuts
4 scallions, white bulbs and green tops cut separately into 1/2-inch pieces
¼ teaspoon dried red-pepper flakes

Steps:

  • In a medium bowl, toss the chicken with 1 tablespoon of the soy sauce, 1 tablespoon of the sherry, and the 1 tablespoon cornstarch.
  • In a small bowl, combine the sugar, vinegar, sesame oil, water, and the remaining 4 tablespoons of soy sauce, 1 tablespoon of sherry, and 2 teaspoons cornstarch.
  • In a wok or large frying pan, heat 1 tablespoon of the oil over moderately high heat. Add the peanuts and stir-fry until light brown, about 30 seconds. Remove from the pan. Heat the remaining 1 tablespoon oil. Add the white part of the scallions and the red-pepper flakes to the pan and cook, stirring, for 30 seconds. Add the chicken with its marinade and cook, stirring, until almost done, 1 to 2 minutes. Add the soy-sauce mixture and the scallion tops and simmer until the chicken is just done, about 1 minute longer. Stir in the peanuts.
  • Variation:
  • Cashew Chicken: Substitute the same amount of cashews for the peanuts.
  • Wine Recommendation: Since the chicken is salty and spicy, the drink's first job is to refresh. An aromatic white wine such as a sauvignon blanc from California or South Africa will do nicely, as will your favorite cold beer.

  • To Prep Marinate chicken in a bowl with salt, Shaoxing wine, sesame oil and cornstarch. Refrigerate for 30 mins. To Cook Heat 2 tbsp cooking oil in wok. Add Sichuan peppercorn, lower heat and fry until aromatic. Dish peppercorns out and set aside. Add garlic and ginger and do a quick stir fry before adding dried red chillies. Continue to stir fry until aromatic and smell spicy. Set aside. Clean wok and heat up with remaining 1 tbsp of cooking oil. Stir fry the marinated chicken until they are 50% cook.
