One of my all time favorites. Simple, delicious, and you can make it spicier or less spicy. The addition of carrots is my own. Can be made with ground turkey or veggie crumbles instead of meat.

Number Of Ingredients 11

1/4 lb bean thread noodles
1 tablespoon oil
3 tablespoons scallions, chopped
2 tablespoons garlic, finely chopped
1 lb ground beef
10 ounces shredded carrots
2 cups chicken stock
1 1/2 tablespoons chili bean sauce
1 teaspoon chili powder (dried chiles, not the Mexican spice)
2 tablespoons soy sauce
1 teaspoon sesame oil

Steps:

  • Soak the noodles in a large bowl of warm water for 15 minutes. When they are soft, drain and discard the water. Cut into 3" lengths and set aside.
  • Heat 1 TB oil in large skillet or wok. Add garlic and scallions, saute a few seconds until fragrant. Add beef and carrots, stir fry till beef is cooked.
  • Add all remaining ingredients EXCEPT sesame oil and let cook together gently for about 5 minutes.
  • Add the drained noodles and sesame oil and cook 5 more minutes.
  • Serve at once.

Quick bean thread noodle salad with spinach and carrots. With a light dressing.

Number Of Ingredients 10

1 small bunch bean thread noodles ( , around 50g)
1/4 cup shredded carrots
around 100g spinach ( , hard roots removed and cut into long pieces)
small pinch of salt
1 teaspoon sesame oil
1 tablespoon black vinegar ( , 1/2 tablespoon more for a sourer taste)
2 garlic cloves ( , smashed or minced)
1/2 tablespoon hot water
1/4 teaspoon sugar
1/2 tablespoon light soy sauce

Steps:

  • Pre-soak the bean thread noodles with clean water for 10-15 minutes until soft. And then cook in boiling water for around 30 seconds (If you want it to be softer, cook for another 30 seconds). They become soft quickly after soaking.
  • Clean spinach and remove the hard roots. Add a small pinch of salt and several drops of oil in boiling water, and then blanch the spinach and shred carrots for 20-30 seconds. Transfer out and soak in cool water. Squeeze the extra water out.
  • In a small bowl, smash the garlic cloves and then add 1/2 tablespoon of hot water. Soak the garlic for half minute and then mix all the other seasonings. Set aside.
  • Place bean thread noodles, spinach, carrots and dressing sauce in a large bowl. Combine well and then serve cold.

  • With scissors cut the noodles into 5-inch or possibly 6-inch lengths. Place them in a metal or possibly other heatproof bowl and cover with boiling water. Allow them to soften, stirring occasionally, for 5 min. Drain in a colander and refresh under cool running water. Dry by patting with paper towels. Set aside. In a food processor or possibly blender process the coriander, garlic, peanut butter, and 1/2 c. of the stock till well combined. Stir the remaining stock, vinegar, sesame oil, sugar, dry mustard, and soy sauce together in a small pitcher and with the motor running add in this mix to the peanut butter in a slow stream. Process till very smooth. Transfer noodles to a serving bowl and pour peanut sauce over them. Toss to coat well. Add in the sesame seeds and scallions and toss again. Serve at room temperature.
