1/4 cup butter, softened
1 cup plus 2 tablespoons sugar, divided
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 teaspoon ground cinnamon

Steps:

In a large bowl, beat butter until light and fluffy, about 1 minute. Gradually beat in 1 cup sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking powder, baking soda and salt. Add to creamed mixture alternately with buttermilk just until mixed., Transfer half of the mixture to a 9x5-in. loaf pan coated with cooking spray. Combine cinnamon and remaining sugar. Sprinkle three-fourths of mixture over batter. Top with remaining butter and sprinkle with remaining cinnamon mixture., Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Ingredients

2 3/4 cups flour
1 tbsp baking powder
1 tbsp cinnamon
2 sticks butter (softened)
2 cups brown sugar
2 eggs
2 cups unsweetened applesauce
Powdered sugar (for sprinkling)

Steps:

Preheat the oven to 350 F. Spray a non-stick regular-size (10 or 12 cup) Bundt pan with a non-stick cooking spray.
Put the butter and brown sugar in a large mixing bowl and mix with a mixer until well combined. Add the eggs and mix until combined.
Add 1 cup of flour, baking powder and cinnamon and mix until combined. Add 1 cup of applesauce and mix until combined. Add the remaining 1 3/4 cup of flour and mix until combined. Add the remaining 1 cup of applesauce and mix until combined.
Transfer the mixture into a Bundt pan. Put it in the oven and bake for 1 hour.
Let the applesauce cake cool completely inside the Bundt pan, then invert it onto a plate.
Sprinkle the applesauce cake with powdered sugar.
